I printed out this recipe and thought about trying it today, but I have no idea how to convert the measurements, nor do I know what "double cream" is. Drats!!!! :blink:

Hi All!

I have taken the liberty of "americanizing" Daveyboy's recipe. I just made it today and it is truly divine! I will rename it "Daveyboy's Irish Marcarpone Parfait." Thank you Daveyboy! You are a chef!!

8oz of mascarpone cheese (a standard package size)

1/2 of a pint carton of heavy whipping cream (this actually makes a lower fat version because double cream is about 6% fatter than anything we can buy on the market here-- unless you go to the trouble of making your own)

4 tbls powerdered or regular sugar (I was out so I used the regular-- it was fine)

zest and juice of 1 lemon (okay-- I used plain old vanilla instead and it was super)

1 Hershey's 5 oz. chocolate bar (minus 2 squares)/

1. start melting the chocolate in a bain marie or double boiler

2. mix the mascarpone and whipping cream together (I used a braun hand blender for fluffiness)

3. divide into two smaller bowls.

4. add the lemon or vanilla and sugar to one bowl-- mix well (again-- the hand blender was good)

5. Add the melted chocolate to the other bowl and whip

6. place the layers into the serving bowls or glasses (chocolate first)

I found this made four small parfaits (okay-- it would have made five, but I "sampled" a lot. My mom told me a good cook always tastes her food and I always take my mom's advice!) so I would double it or even triple it next time depending on your requirements.

All I can say is "Ohhhhhhh!" With recipes like this, who misses gluten anyway?

      If you have hemorrhoids 1x weekly I don't see how you have time to heal from one episode before you experience another one, unless each one is a very minor event. Have you consulted a physician about your hemorrhoid issue? It's not normal to be having an episode every week unless it is really one episode that is not completely healing between weekly flareups.

      No I haven't had one since 2021. I rarely have more than 1 per week.

      Sorry, I see that now as I reread your original post. You say you have hemorrhoids "only once a week" now. When I develop hemorrhoids, which is once every few years now, it generally takes 3-4 days for healing to take place. So, it doesn't seem like you could have much relief time between episodes if you have them weekly. Have you had a lower GI scoping done recently?

      Everyday I eat a medium to large apple in the morning and a large banana at night. I eat a cup of oatmeal in the evening. The ezekiel wheat bread I eat has a good amount of fiber. I haven't dealt with constipation for at least a year. Most of the time my feces are soft.
