Pizza Sauce

Kay I am having trouble with Tomatoes now... but I am stubborn and am not ready to give up my 'pizzas' yet! LOL :lol: so here goes...

I bought a case of these alfredo 'chreese' packets (road's end organics) and here's what I do...

In a small saucepan I put some minced garlic (1 clove) with a little bit of olive oil, then I add 1 cup of frozen chopped spinach and let the water cook out of it then I add 2 cups rice milk (carageenan free) 1 package of alfredo 'chreese' mix, 1/2 ts sweet basil, 1/4 ts oregano, whisk until combined, I cook it until it thickens.

Then I spoon it on my Kinnickinnick pizza crust with the toppings and voiala! It's yum!

That is a nice idea, I am off tomatoes right now too. The Kinnickinnik crusts are in freezer, just waiting. I was debating whether I could handle the cheese in some pesto sauce also in my freezer...I find that canned/jarred tomato sauce is worse than a fresh slice of tomato or a spoonful of salsa...not sure why....

WOW I noticed the same thing for me! I wonder if somehow the canned tomato is concentrated and that is why you feel worse!

I considered the concentration to be an issue too. Although I wondered if I canned my own tomatoes this summer if I would encounter the same problem. I am still not ready to give up on the idea of a tomato garden!
