Joan at gluten-free Great Bakes (the creator of the best gluten-free bagels and english muffins) has created yet another incredible product.

Sicilian pizza!! It's delicious... ofcourse!

I was also lucky enough to taste a new product she is working on at a gluten-free Meetup at the Happy Carrot in NJ today.

gluten-free Matzoh Balls!!!!!

They were delicious. My sister (who is not gluten-free) and I both loved them, and that's saying a lot considering that my dad owns Kosher restaurants. Today was the first time she was testing them on the general public, but I don't think they need any tweeking whatesoever. She is going to be making it as a mix that you can then make your own matzoh balls. I'll keep you updated when they're available as I plan to pester her often to find out ;)

Hey Jillian

How are you?

I've been through seven sicilian pizzas already. Plus the pizza shell is soooooo good..I took a shell & put gluten-free cream of mushroom soup (thickened) Spinach, bacon bits (real) & mozzarella cheese. It was so good.

The matzoh balls are not ready for sale yet, she is still testing them in the market. But you can order any of her other products off her website and she does ship.

Oats naturally contain a protein called avenin, which is similar to the gluten proteins found in wheat, barley, and rye. While avenin is generally considered safe for most people with celiac disease, some individuals, around 5-10% of celiacs, may also have sensitivity to avenin, leading to symptoms similar to gluten exposure. You may fall into this category, and eliminating them is the best way to figure this out. Some people substitute gluten-free quinoa flakes for oats if they want a hot cereal substitute. If you are interested in summaries of scientific publications on the topic of oats and celiac disease, we have an entire category dedicated to it which is here: https://www.celiac.com/celiac-disease/oats-and-celiac-disease-are-they-gluten-free/
