Gluten Free Strawberry Birthday Cake!

Hi! I've taken a break from the boards here (my son was dx'd with GERD as well as celiac's, so I am now having to divide my time between forums for 2 different ailments...wah!) but I wanted to share this recipe. I've posted it before quite awhile ago, but now I have a photo of it so I wanted to share it again!

GLUTEN FREE STRAWBERRY CAKE:

1 1/2 cups white rice flour

3/4 cups tapioca flour

1 teaspoon salt

1 teaspoon baking soda

3 teaspoons baking powder

1 teaspoon xanthan gum

4 eggs

1 1/4 cups white sugar

2/3 cup mayonnaise

1 cup milk

2 teaspoons gluten free vanilla extract

1/2 cup Hershey's Strawberry Milk Mix

Frosting:

2 boxes cream cheese

2 cups powdered sugar

2 teaspoons gluten free vanilla

Filling and topping: Strawberries, raspberries, sparkling clear sugar crystal decorations, leaf garnish

The Cake: Preheat over to 350 degrees F. Grease 2 round pans. Mix the dry ingredients except for the sugar in one bowl, mix eggs, sugar, vanilla, Strawberry milk mix and sugar in a different bowl until well combined. Add the flour mixture a bit at a time, alternating with the milk.

Pour mixture into pans, bake for 25 mintues our until a toothpick comes out clean.

While the cakes cool, cut up strawberries. Do about 2 cups of strawberry chunks for the center of the cake, and then slice up some strawberries in thin slices for the decorations.

Frosting: Mix 2 boxes softened cream cheese well, add the sugar and vanilla and whip until fluffy.

Put it together: Place one cake layer on platter. Add a layer of frosting, and then a layer of cut berries over the frosting. Place second layer on top, and frost the top and sides of the cake. Starting in the center, place a whole berry in the middle and four cut berries at the sides like petals. Add cut berries around the center in a petal formation. Stick cut berries around the sides of the cake as shown in the photo. Add cut berries along the sides of the top of the cake at regular intervals and then place raspberries in between them as shown. Garnish with non-toxic leaves and sprinkle with crystal sugar....it's ready for the candles!!!

And for anyone with other food allergies.......

MAKE IT GLUTEN AND DAIRY FREE: Use rice milk instead of regular milk, and soy cream cheese instead of regular cream cheese.

MAKE IT GLUTEN, DAIRY AND SOY FREE: Follow above for dairy free, use a soy and dairy free frosting mix for frosting (find one at Open Original Shared Link.

MAKE IT GLUTEN, DAIRY, SOY AND EGG FREE: Follow all the above suggestions and use egg replacer according to directions instead of the eggs. Omit mayonnaise and add an extra 2/3 cup of rice milk plus 1 extra tsp. of xanthan gum. Hershey's Strawberry Milk Mix is Soy, gluten, egg and dairy free!

my favorite used to be pink strawberry cake with the betty crocker rainbow chip frosting on top. if this is a pretty good strawberry cake replica, i wonder how to do the rainbow chip frosting? i can't wait to try this, thanks Rissa.

Hey, sweetfudge! I live in Salt Lake City...why don't you pop on over for a slice?!? That's cool, in the grand scheme of things we're neighbors :o) Darn it, though...the cake in the picture, sadly, is gone. They don't last long.

It tastes pretty much like a box cake, if you added more of the strawberry mix it would probably taste even more like it. Just reduce the amount of milk in proportion to the syrup. I still haven't mastered getting a light, fluffy cake gluten free...so imagine the same taste with a heavier, homemade cake texture. They don't *taste* gluten free so much as they taste homemade, if that makes sense....like the wheat-ridden cakes I used to make from scratch before Celiac's. Which is good...but not exactly a box cake.

Have you been to Against the Grain in West Valley? They have got some killer sugar cookies. NOT dairy free, but oh-so-good!

rainbow chip frosting....yum! Some of the commercial frostings are actually gluten free...have you checked to see if there's a gluten-free rainbow chip frosting? There may be...in which case you've got it made! Otherwise, I guess you could find some gluten-free candy or chip and toss it in the frosting recipe, that would be good too. I think I saw rainbow sprinkles gluten free on an allergy grocery site...I'll see if I can find them for you.

OK, Pillsbury frostings are mostly gluten free (I remember this from awhile ago). It's not rainbow chip exactly, but check this out: Open Original Shared Link

From the ingredients, it looks gluten-free. Give them a call first, though. MMMMmmmmmm, if it's gluten-free you could save yourself a step! I love the taste of fresh cream cheese frosting, but I totally understand the quest for a cake that tastes like the good 'ole box cake and instant frosting used to taste. Hope this helps!

Next time you make one, I might just stop by :D I'd make one of my own, but i'm supposed to be on a diet <_< so my husband would give me a hard time for going out of my way to make sweets. although he is going out of town for a few days... ;)

i have yet to visit against the grain. every one i've talked to raves about it. i might just have to plan a trip up there. my next trip north is to take hubby to the airport, but that's at 3AM...doubtful that they'd be open. but, I am picking him up next saturday afternoon! perfect! thanks for reminding me, i'll just swing by on my way to the airport! great idea!

I think the betty crocker frosting has wheat starch in it unfortunately and I've never found anything else quite the same as their rainbow chip but I haven't looked all that hard. I've only made homemade frosting since being on the diet, which is good too just not as convenient sometimes :)

Actually, if you take 1 package of cream cheese and whip it together with 10+ oz of fluff or Ricemellow creme, it's REALLY good! Much lower sugar cream cheese frosting. I put it on chocolate cake and vanilla cake, both were great.

Cool! What's Ricemellow creme, and where do you get it? Is it like the marshmallow fluff you buy in a jar?

does this recipe work pretty well as cupcakes (if you've tried it that way) and would it take the same amount of time to cook? I'd like to try it for a barbeque we're having this week. Thanks!

yep, I bet it will work for cupcakes too! I'd bake them for less time, maybe start with 15 minutes and test them every few minutes after that. Good luck!

I tried this recipe as cupcakes and they overflowed and sank. I think there is too much moisture in the recipe. They took about 20-25 minutes to bake. They tasted good, a little chewy but good. If the milk were decreased by half I think that might help. Anyone else have thoughts on this?

      Blood tests for thiamine are unreliable.  The nutrients from your food get absorbed into the bloodstream and travel around the body.  So, a steak dinner can falsely raise thiamine blood levels in the following days.  Besides, thiamine is utilized inside cells where stores of thiamine are impossible to measure. A better test to ask for is the Erythrocyte Transketolace Activity test.  But even that test has been questioned as to accuracy.  It is expensive and takes time to do.   Because of the discrepancies with thiamine tests and urgency with correcting thiamine deficiency, the World Health Organization recommends giving thiamine for several weeks and looking for health improvement.  Thiamine is water soluble, safe and nontoxic even in high doses.   Many doctors are not given sufficient education in nutrition and deficiency symptoms, and may not be familiar with how often they occur in Celiac disease.  B12 and Vitamin D can be stored for as long as a year in the liver, so not having deficiencies in these two vitamins is not a good indicator of the status of the other seven water soluble B vitamins.  It is possible to have deficiency symptoms BEFORE there's changes in the blood levels.   Ask your doctor about Benfotiamine, a form of thiamine that is better absorbed than Thiamine Mononitrate.  Thiamine Mononitrate is used in many vitamins because it is shelf-stable, a form of thiamine that won't break down sitting around on a store shelf.  This form is difficult for the body to turn into a usable form.  Only thirty percent is absorbed in the intestine, and less is actually used.   Thiamine interacts with all of the other B vitamins, so they should all be supplemented together.  Magnesium is needed to make life sustaining enzymes with thiamine, so a magnesium supplement should be added if magnesium levels are low.   Thiamine is water soluble, safe and nontoxic even in high doses.  There's no harm in trying.

      Neither of them were anemic 6 months after the Celiac diagnosis. His other vitamin levels (d, B12) were never low. My daughters levels were normal after the first 6 months. Is the thiamine test just called thiamine?

      Yes, I do think they need a Thiamine supplement at least. Especially since they eat red meat only occasionally. Most fruits and vegetables are not good sources of Thiamine.  Legumes (beans) do contain thiamine.  Fruits and veggies do have some of the other B vitamins, but thiamine B 1 and  Cobalamine B12 are mostly found in meats.  Meat, especially organ meats like liver, are the best sources of Thiamine, B12, and the six other B vitamins and important minerals like iron.   Thiamine has antibacterial and antiviral properties.  Thiamine is important to our immune systems.  We need more thiamine when we're physically ill or injured, when we're under stress emotionally, and when we exercise, especially outside in hot weather.  We need thiamine and other B vitamins like Niacin B 3 to keep our gastrointestinal tract healthy.  We can't store thiamine for very long.  We can get low in thiamine within three days.  Symptoms can appear suddenly when a high carbohydrate diet is consumed.  (Rice and beans are high in carbohydrates.)  A twenty percent increase in dietary thiamine causes an eighty percent increase in brain function, so symptoms can wax and wane depending on what one eats.  The earliest symptoms like fatigue and anxiety are easily contributed to other things or life events and dismissed.   Correcting nutritional deficiencies needs to be done quickly, especially in children, so their growth isn't stunted.  Nutritional deficiencies can affect intelligence.  Vitamin D deficiency can cause short stature and poor bone formation.   Is your son taking anything for the anemia?  Is the anemia caused by B12 or iron deficiency?

      Thank you! That's helpful. My kids eat very little processed food. Tons of fruit, vegetables, cheese, eggs and occasional red meat. We do a lot of rice and bean bowls, stir fry, etc.  Do you think with all the fruits and vegetables they need a vitamin supplement? I feel like their diet is pretty healthy and balanced with very limited processed food. The only processed food they eat regularly is a bowl of Cheerios here and there.  Could shaking legs be a symptom of just a one-time gluten exposure? I guess there's no way to know for sure if they're getting absolutely zero exposure because they do go to school a couple times a week. We do homeschool but my son does a shared school 2x a week and my daughter does a morning Pre-K 3 x a week.  At home our entire house is strictly gluten free and it is extremely rare for us to eat out. If we eat at someone else's house I usually just bring their food. When we have play dates we bring all the snacks, etc. I try to be really careful since they're still growing. They also, of course, catch kids viruses all the time so I  want to make sure I know whether they're just sick or they've had gluten. It can be pretty confusing when they're pretty young to even be explaining their symptoms!
