Linguine with Clams, Dill & Pine Nuts

Gluten, Soy & Dairy Free

1 package gluten free linguine

1/2 cup clam nectar

1/2 cup dry white wine

1 cup organic veggy broth

3 tb lemon juice

3 tb extra virgin olive oil

3 cloves garlic, minced

1 tb fresh dill, chopped roughly, no stalks

1 tb italian fresh parsley

2 cups clams, chopped and clean from sand

1/3 cup toasted pine nuts

1/2 cup toasted gluten free breadcrumbs

kosher or sea salt (to taste)

In a large stockp

ot add clam nectar, white wine, veggy broth, lemon juice, minced garlic, 1 ts salt. Bring stock to boil and reduce for 10-15 minutes, until the stock is slightly thickened.

Cook off linguine.

While the pasta is cooking, add clams, dill, parsley and olive oil (to stock) heat to boil, then cut heat to low and simmer

until pasta is cooked el dente, about 12 minutes.

When pasta is done, add to clams and stock, and stir well. Using tongs, plate up 4 servings and garnish with pine nuts,

breadcrumbs and remaining stock on each dish.

Serves 4.

ok, so for us non-coastal people, where's the best place to get clams? freezer or can? and what's clam nectar?

You are adorable... clam nectar is the juice clams emit during cooking :)

kinda like chicken broth!

You can get cans... for example 'Bumble Bee' makes whole clams with nectar in 10 oz cans...

      I put on over 12kg by eating protein with every meal, 3 to 5 times a day. Eggs, Chicken, Tuna, Turkey etc. I stay away from too much red meat as it can be inflammatory. Scott is correct. I've come across a bunch of Coeliac PT's on Tiktok and Instagram. They all say the same thing, the key is getting enough protein and consistency.

      Trader Joe's carries a good variety of affordable gluten-free foods like bagels, hamburger buns, pasta, etc. I like Franz Gluten Free bread, which is available at my local Costco. Food For Life and Little Northern Bakehouse (advertisers here) also make excellent gluten-free breads. Costco also sells gluten-free pizzas, crackers, gravy, etc.
