I am wondering if an all-purpose gluten-free flour mix can be used in all of my favorite recipes that I've always used regular white flour for? ie...the tollhouse chocolate chip cookie recipe on the back of the chip bag?

I am hoping there is a quick answer to this, but I have a feeling it is quite involved?? ;)

Hi

There are several or many flour blends that are one to one to replace wheat flour. Here a several you may choose from: BetterBatter Flour, Domata Living Flour, Tom Sawyer plus many more.

One thing is in gluten free you must add xanthan gum or gurar gum. Plus I don't care for plain rice flour, it is gritty. I use a blend of flours..plus if you are used to using oleo in recipes they will run , I now use spectrum, crisco,& again there are many to chose from.

Betty hageman has several good flour blends also.....

If you decide to use plain rice flour the super fine one is the very best- it comes from Authenic brand. hth

And these flour blends can replace the regular all-purpose enriched white flour I am used to using?

Also...what about butter, does butter work the same as oleo? I am used to using butter in everything, should I switch to Crisco for baking?

I use unsalted butter or crisco or spectrum... I use the better batter for her recipes on her site. Which are terrific. I use Annalise Roberts flour blend for her recipes & I use B Hageman four bean flour for other things. I like a variety without having the same taste all the time. I use all the above with my old wheat recipes for years & never had a problem. I use the old choc chip cookie recipe!

      Thanks Kitty for your guidance. I will do the test to see if I have nutrients deficiencies and at the same time re organize my diet to see if that helps with my vertigo and other symptoms.

      Yes, Vitamin D is frequently low in Celiac Disease and Meniere's both.  Ask for an Erythrocyte Transketolace test to check for thiamine insufficiency.  Diuretics can cause excess thiamine loss.  Benfotiamine is a form of thiamine that improves intestinal health.  Thiamine in the form TTFD (Tetrahydrofurfuryl Disulfide) helped improve my Meniere's syndrome.

      Kitty, to correct the anemia I got IV iron and B complex for 30 days. Then my next step will be test for nutritional deficiencies.

      Welcome to the forum, @nataliallano, There's a dozen or so vitamins and about as many minerals that our bodies need to live and thrive.  Our vitamins and minerals can become depleted in Celiac Disease due to malabsorption and inflammation, so we need to eat a nutritionally dense diet, and keep inflammation to a minimum.
