Delicious Waffles

I don't really care for waffles but these are delicious! So good you can eat them plain, right off the iron. I will be making these every week!!!

I followed the recipe exactly except for:

I used:

1 1/2 cups almond milk (the batter was still runny so I added more of Bob's gluten-free flour mix. Don't make the batter too thick. I may have used up to 1/2 cup more flour. I tried a thin sample (like a potato chip) it was so good we couldn't wait for the next one to cook. Sub rice or coconut milk if allergic to milk/soy/nuts.

I used 1/4 cup finely chopped almonds and 1/4 cup walnuts (that's all I had)= 1/2 cup ( I would think you could pulse some gluten-free oats for a nut replacement or leave out)

I pulled a frozen, ripe banana out of the freezer, defrosted it and it was great.

I sprayed the iron each time. I used Bob's flour mix

Then... I made one with Huckleberries...so good :P

I cooked up the remaining batter this morning, adding a bit of water...they are fantastic!

We live in the mountains of Idaho. This is the first year I got to pick them. I hope to go get some more tomorrow to throw in the freezer for more waffles. :P So much better than blueberries, in my opinion anyway, and they are so cute!

The sad thing is its over an hour to the nearest health food store and no whole foods or trader joes. I find something to make and have to wait 2 weeks to get to town :(, esp. with the price of gas/slick roads in the winter.

I learned on here to keep bananas in the freezer for smoothies, ice cream, muffins and now these waffles. So handy when the store is so far away.

Ok. I have to say :ph34r: , b/c I never really liked waffles, I haver never popped them in the toaster before. Well I tried it today with this recipe. WOW! No butter, jam, syrup or anything. Great right out of the toaster...I will do it again. Just thought I would pass it on. ;) mmmmmm :P

      Shingles is dormant and related to chicken pox when one has had in the past.Shingles comes out when stress is heightened.I had my 3rd Shingles in 2023.

      Oats naturally contain a protein called avenin, which is similar to the gluten proteins found in wheat, barley, and rye. While avenin is generally considered safe for most people with celiac disease, some individuals, around 5-10% of celiacs, may also have sensitivity to avenin, leading to symptoms similar to gluten exposure.
