Halloween Pudding Cups

I know this is going to sound like I'm totally bragging...and well...I probably am. But more importantly I wanted to share an idea! I signed up to bring the treats for my son's Halloween party so they could be gluten free. My son and I came up with Halloween graveyard pudding cups. Here's what we did:

I layered chocolate pudding and then vanilla pudding in a clear plastic cocktail glass.

On top of the pudding we sprinkled crushed K-Toos "oreo" cookies.

Then we tossed on a gluten free gummy worm (Wal Mart Great Values brand).

Added a chocoalte cut out cookie (I used a baby bottle shaped cookie cutter and then stuck the nipple side into the pudding) with RIP printed in frosting.

Lastly we added a candy corn pumpkin.

They look so good! (And my son (who's eating a sample cup right now while reading over my shoulder) said to add "They really do!")

Just curious... How are you going to transport those? I am bringing cookies this year. They are "regular" Halloween ones, individually wrapped, with one plain gluten-free one for daughter. I thought I would be smart and leave them in the back of my van, but driving around with them in there broke 5 of them.

Wouldn't you know, the store where I bought them only had 2 more. So I had to get a different kind at another store. I just hope no more break. Grrr...

They're on two cookie sheets. We live less than 3 minutes from the school, so I don't anticipate a problem. Still, I'll be the slow one creeping around corners at 2:00!

Great idea! Do you mind posting your chocolate cut-out cookie recipe?

You are lucky that your schools let you bring homemade treats in. Our school only lets us bring store-bought treats.

Here's the cookie recipe. It's too buttery for my tastes, but my son like them. This recipe is for sandwich cookies, but I just made the headstones (single layer, not a sandwich). They sound like Oreos, but they aren't. They cookie is thicker and softer.

1 1/2 cups butter or margarine

1 cup sugar

1 egg

1 TBS milk (rice, soy, or cow)

1 tsp baking powder

1 3.9 oz box of chocolate fudge instant pudding (I used milk chocolate, not fudge, because DS isn't a chocolatey chocolate fan)

3 TBS tapioca flour

1 cup sweet rice flour

3/4 cup potato flour

2 tsp xanthan gum

Preheat oven to 350.

Combine flurs, backing powder, xanthan gum, and pudding in bowl.

Cream butter and sugar. Add egg and beat well.

Add flours and milk alternating.

Roll out dough and cut rounds with a cookie cutter.

Bake at 350 for 10-12 minutes.

Filling:

2 cups powdered sugar

1./4 tsp vanilla

3 TBS shortening

2 TBS hot water

Assemble as sandwich cookies.

      Hi everyone  This has been a crazy year so far... How many people actually get entire sensory overload from gluten or something similar ?  My jaw is going nuts ..and that nerve is affecting my upper back and so on ...  Bones even hurt.  Brain fog. Etc  I had eggs seemed fine.   Then my aid cooked a chicken stir fry in the microwave because my food order shorted a couple key items .   I was so hungry but I noticed light breading and some ingredients with SOY !!! Why are we suffering with soy ? This triggered a sensitivity to bananas and gluten-free yogurt it seems like it's a cycle that it goes on.  The tiniest amount of something gets me I'm guessing the tiny bit of breading that I took one tiny nibble of ...yikes ..im cringing from it .. Feels like my stomach is going to explode yet still very hungry 😔  How long does this last?! Thank you so much

      I have had orthodontic work done. The 3M invisalign material was no problem. BUT my retainers are another matter. They seemed okay for a few months. Now, however, they cause a burning sensation on my tongue, gums and insides of my lips. The burning sensation is now spreading to my throat. I notice it when I breathe. This is annoying and interferes with my enjoyment of eating. I am visiting with my provider tomorrow. We'll see where this goes from here.

      Exactly which blood tests were done? There are a few different ones and some docs don't do them all. Also, your results and reference ranges for each?
