Having Trouble With Hidden Glutens

okay, so i know the obvious (wheat, rye, barley, malt, oats, etc) but what about the hidden ingredients? there are so many additives that i don't know what has gluten and what doesn't. does all broth have gluten? is MSG gluten? i know it's bad for you, but is it bad for my daughter's celiac? does anyone have a list or anything of things to look out for? we have an appointment with a dietician on monday to go over this stuff, but she's been on a gluten-free diet for a week and is still having stomach pain. can anyone help?

I printed the list out and keep it with me at all times. Depending on where you live, some stores can be very helpful. Wal-Mart brand items will actually say gluten free on them. Kroger stores have an organic section which will also contain some gluten free items.

Keep in mind to check all medication, vitamins, etc. for any gluten. That's what got me in the first few days.

is MSG gluten?
No, MSG is not gluten. There are no special considerations regarding MSG due to celiac disease.

These helped me when I first started:

* Do not eat anything that contains the following grains: wheat, rye, and barley.

* The following can be eaten in any amount: corn, potato, rice, soybeans, tapioca, arrowroot, carob, buckwheat, millet, amaranth and quinoa.

* Distilled white vinegar does not contain gluten.

* Malt vinegar does contain gluten.

Grains are used in the processing of many ingredients, so it will be necessary to seek out hidden gluten. The following terms found in food labels may mean that there is gluten in the product.

* Hydrolyzed Vegetable Protein (HVP), unless made from soy or corn

* Flour or Cereal products, unless made with pure rice flour, corn flour, potato flour, or soy flour

* Vegetable Protein unless made from soy or corn

* Malt or Malt Flavoring unless derived from corn

* Modified Starch or Modified Food Starch unless arrowroot, corn, potato, tapioca, waxy maize, or maize is used

* Vegetable Gum unless vegetable gums are carob bean gum, locust bean gum, cellulose gum, guar gum, gum arabic, gum aracia, gum tragacanth, xanthan gum, or vegetable starch

* Soy Sauce or Soy Sauce Solids unless you know they do not contain wheat

Any of the following words on food labels usually means that a grain containing gluten has been used

* stabilizer

* starch

* flavoring

* emulsifier

* hydrolyzed plant protein

# Acacia

# Gum Acacia

# Ceresin

# Natural Flavors

# Malt Vinegar

# Alcohol or Malt Beer (any beverage made from grain)

      That and my nutritionist also said that drinking cider is one of the worst drink choices for me, given that I have candida overgrowth.  She said the combination of the alcohol and sugar would be very likely to worsen my candida problem.  She suggested that if I drink, I go for clear vodka, either neat or with a splash of cranberry.   So in summary, I am giving ciders a rest.  Whether it's a gluten risk or sugars and yeast overgrowth, its just not worth it.

      While plain, pure tea leaves (black, green, or white) are naturally gluten-free, the issue often lies not with the tea itself but with other ingredients or processing. Many flavored teas use barley malt or other gluten-containing grains as a flavoring agent, which would be clearly listed on the ingredient label. Cross-contamination is another possibility, either in the facility where the tea is processed or, surprisingly, from the tea bag material itself—some tea bags are sealed with a wheat-based glue. Furthermore, it's important to consider that your reaction could be to other substances in tea, such as high levels of tannins, which can be hard on the stomach, or to natural histamines or other compounds that can cause a non-celiac immune response. The best way to investigate is to carefully read labels for hidden ingredients, try switching to a certified gluten-free tea brand that uses whole leaf or pyramid-style bags, and see if the reaction persists.
