Maltodextrin Is gluten-free?

I came across this at glutenfreeliving.com:

"Maltodextrin is gluten free. It can be made from a variety of starches, including corn, potato, rice or wheat. However the source does not matter because maltodextrin is such a highly processed ingredient that the protein is removed, rendering it gluten free. If wheat is used to make maltodextrin, "wheat" will be appear on the label. Even in this case, the maltodextrin would be gluten free."

I've always thought wheat-based maltodextrin was unsafe because that's what I'd always read... so what's the deal? Safe or unsafe?

Gluten free.

Some people are allergic to the gluten but not the wheat plant. But there are some people that are allergic to the gluten and the wheat plant. When i say the wheat plant i mean when they touch it they have a skin reaction. So when they kill off the gluten protien and if your not allergie the plant you should br fine. I've actually met someone that was allergic the plant and explained the difference to me.

I personally do not consume wheat that has 'the gluten processed out of it'. For me this also applies to gluten grain distilled alcohols and vinegars. I am very sensitive and will react. I am thankful that they now have to disclose it on the label.

      Yes, @trents is right, ascorbic acid can be irritating.  Do you take it with food? Do you take other supplements or vitamins? Do you eat processed meats?   Is your diet high in carbohydrates?

      Be careful with C supplementation. It's ascorbic "acid". Too much can cause stomach and gut irritation.

      Thanks for the info, Its one I've not used before its got Noni Fruit, Astragalus Root in it as a prebiotic. As i never eat fruit it might be a cause.
