Quick Lunch Ideas

I know that this is not the forum for recipe sharing but I was wondering if some of you "old-timers" could give me some ideas on what you have for lunch. I work and so I bring my lunch in and I have about 30 minutes to eat it. I have a microwave that can use but that's it. I have been taking rice cakes with tuna fish a lot and also fresh fruit but that's getting a little old. I do enjoy cooking and would be able to fix something small the night before but I live about 60 miles from the nearest Health Food store so I am limited on labeled gluten-free food at home right now. I have some gluten-free spaghetti and Penne pasta, but I ate the last of my gluten-free bread yesterday (I,m waiting on my internet order of gluten-free bread mixes to come). Some fresh ideas would be appreciated. Thanks

Sunday night I usually cook some chicken (with garlic and onions) and a pot of basmati or jasmine rice (enough for the week). I divide the rice and chicken into containers. Total prep and cook time is about a half hour. In the morning I throw in some frozen or fresh veggies, maybe some seasoning or sauce (butter if I'm feeling naughty), and run out the door. Switching the veggies and seasonings keeps it from getting boring. Sometimes I'll do a pot of stew in the crock pot--throw everything in and ignore it for the day or overnight--easy and only one pot to clean. Love to cook, but am Lazy.

I just tried their Thai Peanut flavored stir-fry kit with the meat from a split chicken breast I had in the freezer and found it to be a little under-salted, but otherwise very tasty and not too complicated to throw together. They also have little packs of instant soup (their "Instant Rice Noodle Soup) that are all gluten-free and I'm going to try that soon (I also grabbed this one for 79 cents, so that fits in my budget!). It's a single serving made with hot water, so it'll be perfect to keep in my desk drawer at work :)

The easiest (and most satisfying) lunch for me, is simply leftover dinner from the night before! Fix extra portions of dinner so you have something for lunch the next day.

I keep my drawer at work full of soup so I always have something, even if I didn't have time to come up with anything.

If I have time on the weekend I'll cook a couple big meals and divvy them up onto containers and stick them in the freezer. These also work for dinner if your caught short.

My lunch most of the time is a box of Ian's gluten-free chicken nuggets and some cut up raw vegetables. Sometimes I have some canned refried beans heated and used as a dip or put in tortillas for tacos. Also with raw veg. I also love big salads and would eat those more often, but I have gastroparesis so I don't digest them well. I used to make taco salads. I would cook some ground beef (you can also use chicken) ahead of time and portion it up in plastic bags. Come lunch time, I would put this in a large bowl, heat it and then top it with the salad stuff. I would eat this with a few tortilla chips. If you can have dairy (I can't) you could have cottage cheese or yogurt with fruit. And of course there are always the leftovers. I used to send leftovers for daughter's lunch all the time until she pitched a fit and demanded sandwiches. For her, I usually send a sandwich, a pack of Enjoy Life cookies or a candy bar, a pack of carrots and apple slices from Costco or elsewhere, and a bag of chips. Today she had some rice yogurt, pepperoni, apples, potato chips and a chocolate bar.

I roast or saute extra chicken breast when I'm making dinner. Next day, dice or slice. Put on a salad with tomato, cucumber, chickpeas, carrot etc. or salami, artichoke hearts etc. and small container of favorite dressing. I also cook a small portion of long-grain white rice and add some chopped broccoli to the water. When it's done add chopped leftover chicken, ham or hot dogs and shredded cheese and sometimes frozen corn, salt and pepper. I keep a stash of pre-cooked meatballs in the freezer-use processed General Mills Rice Chex for the bread crumbs. You can make a recipe of meatloaf and scoop it with an icecream scoop and bake it in muffin tins for individual portions and freeze. Pop one or two in the micro for a quick main dish. Add a micro baked potato and some fresh steamed or frozen veg. Canned chili and hot dogs and a salad with an avacado half, salsa and mayo-sour cream might be better if you can have dairy. Hormel makes some gluten-free chili but not all varieties are so check.

      Hi Katht -  I sympathize with your struggles in following a gluten-free diet and lifestyle. I found out that I had Celiac Disease a few months before I turned 70. I just turned 89 and it has taken me almost 20 years to attain a fairly normal intestinal  function. I also lost a lot of weight, down to 100 lb. down from about 140 lb. What Trents wrote you was very true for me. I am still elimination foods from my diet. One person suggested you keep a food diary and that is a good idea but it is probably best just to do an elimination diet. There are several ne and maybe one for celiacs. I used one for a while and started with plain rice and zucchini and then added back other foods to see if I reacted or not. That helped a great deal but what I did not realise that it would only very small amounts of some foods to cause inflammation in my intestine. Within the last few years I have stopped eating any trace amounts of hot peppers, corn and soy(mostly in supplements) and nuts, (the corn in Tylenol was giving me stomach aches and the nuts were causing foot pains). Starting an elimination diet with white rice is better than brown rice that has some natural toxins. In addition it is very important to drink sufficient plain water. You can find out how much to drink for your height and weight online. I do have difficulty drinking 48 ounces of water but just recently have found an electrolyte supplement that helps me stay well hydrated, Adding the water and electrolytes may reduce muscle cramps and gag spams you wrote about. . Also buy some anti-gluten enzyme capsules to take with meals. I use GliadinX advertised here. These are a lot of things to do at one time as they reflect my 20 years of experience. I hope you do what you can manage to do over time. Good luck and take care.

      Yes thyroid was tested.. negative  Iron ...I'm. Not sure ... Would that fall under red blood count?  If so I was ok  Thank you for the detailed response..☺️

      Hi all !! Did anyone ever get prescribed methylprednisone steroids for inflammation of stomach and intestines?  Did it work ??  Thank you !!

      Hi Colleen Are you supplementing B12/having injections? I have learned recently that sometimes when you start addressing a B12 deficiency, it can temporarily make your symptoms worse.  But it is important not to stop the treatment.  Regarding your problems with anxiety, again that is another symptom of a B12 deficiency.   I didn't know what anxiety was until it hit me like a train several months before gastrointestinal issues began, so I can certainly relate.   Two books which helped me hugely were At Last A Life by Paul David (there is a website you can look up) and The Depression Cure: The Six-Step Programme to Beat Depression Without Drugs by Dr Steve Llardi.  Although his book is aimed at people who have depression, following the principals he sets out was so helpful in lessening my anxiety.  Llardi suggests we need to focus on getting enough: - physical exercise - omega-3 fatty acids - natural sunlight exposure - restorative sleep - social connectedness - meaningful, engaging activity   ... and we should feel a lot better. That is not to stay you must stop taking medication for depression or anxiety if you have been prescribed it, but adopting the changes Dr Llardi sets out in the book should really help. Can I just ask two more questions:  1) you say that you are B12 deficient, did they test your iron levels too?  If not, you really ought to be checked for deficiency and, 2) did they check your thyroid function, as an overactive thyroid can be cause rapid heartbeat and a lot of coeliacs have thyroid issues?       Hello still dancing around my celiac disease and not getting medically backed up considering Ive been glutenfree since 1994.All my ailments are the core issue of my ghost disease aka celiac disease. Im angery because the "celiac specialist " basically lightly dismissed me.Im extremely angery and fighting for a new primary care physician which is hard to do in Northern Cali.So currently without and looking.Im angery that its lightly taken when its extremely serious to the one who has it.My only evidence is a brochure back in the days when I got news letters when I lived at my parents.It was published in 1998.I was diagnosed before any foods eliminated from my diet. Angery doctors don't take seriously when Im clearly speaking.I did write to the medicine of congress and have case number.
