This is my first post and any help would be greatful. We found out last week that our son has Celiac D and I have been reading y'alls post on here and it seems to be a great place for information. One thing that bothers me is I have been seeing a lot of post about no dairy products for children, I was just concerened that our dr might not have told us correctly. Are we not suppose to be giving him any dairy products or am I missing something here, b/c our dr. said he could have dairy products, but alot of post on here talk about dairy alternatives. Sorry if it is a stupid question, I'm just kinda concerned, to say the least!!

A number of people find themselves lactose intolerant when first diagnosed with celiac. This is because the intestines are damaged and the villi, which produce lactase (which is the enzyme that breaks up lactose, the main sugar in milk), are damaged and cannot produce lactase. Often, in this case, lactose-free or low-lactose dairy products can be used, and regular dairy can be introduced after a sufficiently long period of time for healing. (This length of time varies for every one - from four or five months to a few years.)

Additionally, many people on the site have other protein intolerances - dairy, soy, eggs, etc. This isn't cause by celiac, but some suspect that it may be related. If your son is casein (milk protein) sensitive, then you'd stay off all milk, even low-lactose ones. Some people find this type of intolerance also fades after being gluten free, some do not.

It's just precaution because so many have a lactose problem in the beginning. You may think he doesn't but the symptoms can be masked by the over all celiac disease symptoms. If you take him off fresh milk products in the beginning, you will be one step ahead in his healing if there's a chance it's a problem. In a few weeks you can reintroduce it and see how he feels.

Yes, we have been aware that this can be an issue with mushrooms but as long as they are rinsed thoroughly it should not be a problem since the mushrooms don't actually incorporate the gluten into their cellular structure. For the same reason, one needs to be careful when buying aged cheeses and products containing yeast because of the fact that they are sometimes cultured on gluten-containing substrate.

      The one kind of food I had been buying and eating without any worry for hidden gluten were unprocessed veggies. Well, yesterday I discovered yet another pitfall: cultivated mushrooms. I tried some new ones, Shimeji to be precise (used in many asian soup and rice dishes). Later, at home, I was taking a closer look at the product: the mushrooms were growing from a visible layer of shredded cereals that had not been removed. After a quick web research I learned that these mushrooms are commonly cultivated on a cereal-based medium like wheat bran. I hope that info his helpful to someone.

Incidentally, I don't like quinoa either. Reminds me and smells to me like wet grass seed. When its not washed before cooking it makes me ill because of saponins in the seed coat. Yes, it can be difficult to get much dietary calcium without dairy. But in many cases, it's not the amount of calcium in the diet that is the problem but the poor uptake of it. And too much calcium supplementation can interfere with the absorption of vitamins and minerals in general because it raises gut pH.
