Corn Syrup Substitute?

Does anyone know of a good corn syrup substitute? My hope is that there is something simple that you can buy at a store but I'm willing to make one also.

I think it depends on how much you are using and what you are making with it. If you don't need much you could try: honey, molasses, maple syrup, light or dark agave nectar. Light agave nectar might be the closest in flavor. I put it in waffles. If making cooked candies the subs may not work...IDK. I don't make much cooked candy, just pb fudge and it only takes a little bit of corn syrup.

Maybe someone else will give you some ideas.

I would think it would depend on what you're using it for. I know that most marshmallow recipes call for it, but you can make marshmallows just using sugar. Corn syrup in marshmallows just kind of kicks and speeds up the boiled sugar a bit and helps the texture a little, but they're still quite lovely without it. So I think the answer depends on what you're using it in and why it's in the recipe.

Lundberg Family Farms makes gluten free brown rice syrup. I use it on my cream of brown rice cereal daily.

No, I am not allergic to corn but I thought it would be interesting to try to make corn-free marshmallows since I can't seem to find any.

This is the recipe I used without corn syrup. They were very good. I actually like this recipe better than the one I tried that used corn syrup. It may take longer for the sugar to get to the soft ball stage, that is the only drawback. Keep in mind that powdered sugar usually contains cornstarch, so confectioners sugar is a safer bet if corn is a problem.

Does anyone know of a good corn syrup substitute? My hope is that there is something simple that you can buy at a store but I'm willing to make one also.

I picked up some Tapioca Syrup through Allergen Grocer as a Corn Syrup replacement and it works well. I also got Sorghum Syrup to replace Molasses and it also works wonderfully in that respect. I heard the Tate and Lyle's Golden Syrup is also gluten-free and Cornfree (the tin canned ones, although the others Golden Syrups they make are said not to be cornfree) but it's hard to come by out this way.

Incidentally, I don't like quinoa either. Reminds me and smells to me like wet grass seed. When its not washed before cooking it makes me ill because of saponins in the seed coat.       oh that's interesting... it's hard to say for sure but it has *seemed* like oats might be causing me some vague issues in the past few months. It's odd that I never really connect specific symptoms to foods, it's more of an all over feeling of unwellness after  eating them.  If it happens a few times after eating the same foods- I cut back or avoid them. for this reason I avoid dairy and eggs.  So far this has worked well for me.  oh, I have some of Bob's Red Mill Mighty Tasty Hot cereal and I love it! it's hard to find but I will be looking for more.  for the next few weeks I'm going to be concentrating on whole fresh fruits and veggies and beans and nuts and seeds. I'll have to find out if grains are truly necessary in our diet. I buy brown rice pasta but only eat that maybe once a month at most. Never liked quinoa. And all the other exotic sounding grains seem to be time consuming to prepare. Something to look at later. I love beans and to me they provide the heft and calories that make me feel full for a lot longer than a big bowl of broccoli or other veggies. I can't even tolerate the plant milks right now.  I have reached out to the endo for guidance regarding calcium intake - she wants me to consume 1000mgs from food daily and I'm not able to get to more than 600mgs right now.  not supposed to use a supplement until after my next round of testing for hyperparathyroidism.   thanks again- you seem to know quite a bit about celiac.

      Welcome to the celiac.com community, @SilkieFairy! You could also have NCGS (Non Celiac Gluten Sensitivity) as opposed to celiac disease. They share many of the same symptoms, especially the GI ones. There is no test for NCGS. Celiac disease must first be ruled out.
