Don't be afraid to up the xanthan gum a little if necessary - if you use plain rice flour the stickiness factor may need to be changed - I would use enough so that you can roll it out to 6 inches or so.

Thank you for your Indian Flat bread recipe sounds delicious. If you have any Indian recipes please due share. We buy Mini Papa Dums made by Bomby Poppas imported by ALLEGRO into Oz at the local greengrocer. They are gluten-free. We eat them by the tube. They come in 3 flavours mild chilli & garlic, coriander and original. :rolleyes:

This sounds great but when I look at the recipe, I get a bunch of "?" for the measurements - were they 1/2 tsp, etc? I figure I can just roll with it and figure it out but was wondering if it was 1/2 cup water or 1/3 or 3/4 or ??? (I put those "?" in there.. hahahaha!)

Then I slowly add the water. I don�t actually add a measured amount, I just add it until I get a nice smooth dough. I knead this until it is smooth. If I add too much water I then just add more flour until it is right.

I take the ??? to mean add seasoning to your taste, and use enough water to make it a dough ball. If you use different flours, it will take different amounts of water.

I know that sometimes certain characters in fonts like " or ' don't come through on the web (I do a lot of web work) and that when you have Cold Fusion (like this forum uses) then it will substitute a ? when it can't recognize a character. So maybe for some the ? comes out as an actual character or value but on mine for sure it doesn't. Also, for fractions, sometimes they come out looking like this: ½ instead of 1/2.

Anyway, I guess I can work with this but since they came out so perfectly, I'd love to have the actual amounts...

      My college age daughter has been having pain. She has had reflux and ulcers, as well as celiac.  She has been gluten-free for 14 years.  She found a new gastro in her college town and he scheduled an endoscopy with biopsies.  He told her she must eat gluten every day for a week prior to biopsy. I am stumped by this.  We know she has celiac.  She had a biopsy and it was positive. She has all the genes, etc.  Why is he saying she needs to eat gluten?  She will be so sick? Is normal?  We have never had this before.

      Start by reading the ingredient label for wheat, barely or rye or anything that might be derived from them. I would also call the manufacturer and ask that question. Usually, the thing that they cannot guarantee is that there is no cross contamination from equipment the ingredients are processed on but unless you are a super sensitive celiac that may not be an issue.

      Tammy, who is saying they aren't safe for celiacs? Are you saying that is stated on the product packaging itself or that you are reading where people on forums like this one are claiming they aren't safe? Who is "they"?

      If a product is labelled "gluten-free" it is considered to be safe for people with celiac disease (in the USA they need to test below 20 ppm). Some people prefer to eat only foods that are certified gluten-free, which are supposed to test below 10 ppm, however, they don't always test this low.

      Why are so many gluten free items not safe for celiacs. I read labels all the time. I don’t know how many times they say that and are not safe for people who have celiacs. So confused. Help….
