I know I'm probably posting this in the wrong area...but here goes anyway. I think I got gluten and looking at my food logs the only thing it could have been were either baked beans or coleslaw. The coleslaw was purchased at a deli and it had a vinegar taste, however I can't figure out what the heck would be in coleslaw that would contain gluten...any thoughts?

If it's from the deli, there could be a lot of cc issues. There's mayo in coleslaw dressing, they could be double dipping into the mayo jar to make sandwiches, pasta salads etc... There is vinegar in the dressing as well, but should be OK as long as it's not a malt vinegar. Did you get your baked beans at the deli also? Lots of brands contain wheat.

No...the baked beans came from a can, but I was in such a rush, I didn't even notice the brand name. As for the coleslaw, it definately had a strong vinegar taste, but I'm not sure if they make there own, or get it by bulk...I'm think there own...but I'm going to call.

I bet on cross-contamination as the most probable source. Personally I wouldn't dare eating anything from deli.

If there was mayo then it could also be source of gluten or cross-contamination.

Third is the vinegar. Do you react to vodka/whisky? If so, you might react to white vinegar as well. (I do)

My vote goes to beans and then cross contamination of the coleslaw. The deli staff could have prepared it wearing the same gloves they used to make pasta salad, for example. I've also seen wheat starch in several different kinds of beans (usually chili beans, but baked I've never looked at closely. We buy Bush's, which are gluten-free).

We generally avoid deli food purchases because the risk of cross contamination is so high.

Not all of them any more.... Just make sure to read the label. If it's in there, it will be listed!

really...I thought all Bush Beans were gluten-free...I didn't know you had to read the label with them! thanks....I really don't know what kind of beans she served that day, I forgot to look at the can.

That's actually relatively out of date because the Bush's Chili Beans switched from wheat starch to corn starch (at least where I buy them) and I always double check before purchasing. We buy the chili beans (not the chili) in order to make our own chili.

      You already got some great recommendations. Just want to second that Mallorca (and Spain in general) is one of the best and easiest places for celiacs to travel. I have been to Mallorca multiple times and have never experienced any cross contaminations and there are SO many easy to buy options in regular supermarkets. Hope you have a wonderful trip.

      I agree.  If someone has Barrett's Esophagus, at least here in the UK, as I understand it under normal circumstances a PPI needs to be taken long term (or similar medication).  I have two friends with this.  The PPI it does have side effects but they still have to take it.

      Do talk to your doctor about making changes to your medication.    I'm not a medical doctor.   I'm a microbiologist.  I studied nutrition before switching to microbiology because I was curious what vitamins were doing inside the body. I would hate to give advice that jeopardizes your health, so do discuss things with your doctor.

      @Jmartes71, Sorry you've been feeling so poorly.   Are you taking any medication to treat the SIBO?   Are you taking any Benfotiamine?  Benfotiamine will help get control of the SIBO.  Thiamine deficiency has symptoms in common with MS. Have you had your gas appliances checked for gas leaks and exhaust fume leaks?  Carbon Monoxide poisoning can cause the same symptoms as the flu and glutening.  Doctors have to check venous blood (not arterial) for carbon monoxide.  Are other inhabitants sick, or just you?  Do they leave the house and get fresh air which relieves their symptoms?

      European wheat is often a "soft wheat" variety which contains less gluten than "hard wheat" varieties found in the States.   In European countries, different cooking methods and longer  fermentation (rising or proofing) times allow for further breakdown of gluten peptides. Wheat in the States is a blend of hard and soft wheat.  Gluten content can vary according to where the wheat was grown, growing conditions, when harvested, and local preference, so a blend of both hard and soft wheat is used to make a uniform product.   I moved around quite a bit as a child in a military family.  I had different reactions to gluten in different areas of the country every time we moved.  I believe some wheat breeds and blends are able to provoke a worse immune response than others.   Since European soft wheat doesn't contain as much gluten as American wheat, you may try increasing your intake of your soft wheat products.  A minimum of ten grams of gluten is required to get a sufficient immunological response so that the anti-gluten antibodies leave the intestines and enter the bloodstream where they can be measured by the tTg IgA test.  Your whole wheat bread may only have a gram of gluten per slice, so be prepared...
