Lunch And Snack Ideas?

Anyone have any good lunch and snack ideas? Lately I am just getting so bored with what I eat and seem to just eat the same thing over and over again. I am gluten free and dairy free.

I usually do rice cakes w/ almond butter, soy milk...for snacks.

Lunch a lot of times is left overs....

I try to stay away from the pre-packaged stuff b/c it's kind of junky anyhow...

I used to love Luna bars, but they are not gluten-free. I was loving Kind bars for a while but then the honey got to bother my stomach....

Purefit bars are gluten and dairy free. They pack a punch for when you are in a hurry (lotsa protien). Go Free makes good granola-ish bars that are gluten and dairy free (and yummy). Bumble bars are yummy but they may have honey. I am a big fan of lots of fruits and veggies as snacks. grapes and apples travel well. Baby carrots and sugar snap peas are my favorite veggie snackes. Carrots & PB are yummy if you need a bit of protein. Lunch ideas: tuna or chicken salad wraps (french meadow makes a pretty good version of a flour tortilla, make sure your canned chicken/tuna is gluten free, best foods Mayo is gluten & casein free). Or you can cook up some rice and beans & veggies and put that in a wrap. does this mean you also need other dinner ideas as well if you are getting bored with the leftovers...? Hope this helps a bit! :D

So Delicious coconut milk (comes in a milk cartons in the refrigerated section but recently I saw it in shelf stable cartons)

Vegan Gourmet makes a "cheese" that's good melted on things- think nachos, pizza toast etc. Gillian's Rolls are CF and make nice pizza toasts or tuna melts

I make up an antipasta plate with marinated mushrooms, mixed olives, carrot and celery sticks and salami(Hormel).

Tuna salad and crackers (Glutino plain are CF)

Nuts are great to snack on-you can make homemade trail mix with nuts and seeds(pumpkin, sunfower) and shredded coconut, dried fruits, and Enjoylife choco chips- choose unsalted and/or unsweetened varieties of ingredients to make it "healthier"

Thanks! i'll have to try the Vegan Gourmet cheese. I had tried Daiya cheese (vegan as well) but that didn't agree with me....

Oh and oddly I can't eat apples (which were my favorite fruit)...gives me horrible internal gas...fructose issues I'm thinking.

Dinner I'm pretty good on. B/c I have the time to cook and such. The problem really is simple, quick and filling snacks.

Japanese rice balls. you can make all sorts of variations. google "onigiri".

if you can eat eggs, make mini crustless quiches in muffin tins and freeze to have on hand.

bean salads. beans + homemade dressing + random chopped up veg

For portable, I like the little pineapple cups (pricey, but sometimes $$ if worth it for the convinience).

      It's not rocket science, like @Scott Adams says!   My best advice is not to take Thiamine Mononitrate because the body doesn't absorb it well (only 30% is absorbed, less than that can be utilized).  Thiamine Mononitrate is used in many multivitamin supplements because it's cheap and shelf stable, meaning it won't break down in storage on a store shelf, or when exposed to heat or light.  This stability makes it fairly useless to the body, but lines the pockets of the manufacturer.   Use other forms if Thiamine Vitamin B1 like Thiamine Hydrochloride, or Benfotiamine, or TTFD (tetrahydrofurfuryl disulfide).  Benfotiamine has been scientifically shown to promote intestinal healing.  TTFD is...

      I'm also already struggling to get the motivation to eat because of the anxiety around food, not being able to eat the things that I am craving, and the amount of time and effort that goes into preparing every single meal, so I worry that increasing the restriction will just make it harder and harder to eat.  Thank you all for all the suggestions and listening to my concerns, it's helped me feel like there are more options and feel understood, at a time when I am feeling pretty hopeless and stuck.

My vitamin D was low, 26.6 normal is 30-80 but I live in a northern state of the US and a lot of people are low, my total omegas were also low.  Transglutaminase IgG Antibodies (Normal range: below <6 U/mL my value was 28) Transglutaminase IgA Antibodies (Normal range: below <4 U/mL my value was 30.)       Thank you @knitty kitty this is all very helpful insight, and I was considering doing a strict elimination diet like this. I was considering the one from this article: https://pmc.ncbi.nlm.nih.gov/articles/PMC5691745/ which seems a little shorter/less restrictive? But I see how the AIP diet could be better for addressing the general inflammation/autoimmune response. Did you work with a nutritionist or doctors for this? I am very worried about going on such a strict diet without professional support and losing essential nutrients/body weight. If not, how did you know which supplements are needed? I am also struggling in general with managing and maintaining such a strict...

      @ehb, welcome to the forum!   Yes, figuring out the gluten free diet and recovery can be really frustrating at the start.  There are things that you can change now which are more restrictive for a while, but they promote healing, and, in future, you'll be able to relax those restrictions.   I found the Autoimmune Protocol Diet most helpful.  It's a very strict Paleo diet, but I started feeling better quickly after doing the "standard GFD recommendations" without improvement.  It's very strict during the elimination phase, but other foods are added back once there's intestinal improvement.  I recommend the book The Paleo Approach by Dr. Sarah Ballantyne, a Celiac herself, who developed...
