Carrot Cake

This works great as long as you own a food processor..

  • one quart of milk ( soy milk will do)
  • one pound of carrots
  • honey
  • patience

Grate the carrots into a very fine mesh and put into a wok and add the milk.

Boil away all the milk..Takes about an hour..In the last 15 minutes start adding in some honey and keep stirring..It will form into a foam as you cook..Leave the foam in there..

If you wish to dry it out further, you can put it in an oiled casserole dish and bake for 20 minutes at 350 F..

Some option to omit the honey while others ramp the amount way up.

I add enough to just color it a touch darker..It won't gel as well as a store bought cake, but this is the way they make it in India. Eat it with a spoon. Extremely sweet.

      They may want to also eliminate other possible causes for your symptoms/issues and are doing additional tests.  Here is info about blood tests for celiac disease--if positive an endoscopy where biopsies of your intestinal villi are taken to confirm is the typical follow up.

      In the Europe the new protocol for making a celiac disease diagnosis in children is if their tTg-IgA (tissue transglutaminase IgA) levels are 10 times or above the positive level for celiac disease--and you are above that level. According to the latest research, if the blood test results are at certain high levels that range between 5-10 times the reference range for a positive celiac disease diagnosis, it may not be necessary to confirm the results using an endoscopy/biopsy: Blood Test Alone Can Diagnose Celiac Disease in Most Children and Adults TGA-IgA at or Above Five Times Normal Limit in Kids Indicates Celiac Disease in Nearly All Cases No More Biopsies to Diagnose Celiac Disease in Children! May I ask why you've had so many past tTg-IgA tests done, and many of them seem to have been done 3 times during short time intervals?

      This may sound ridiculous but is this supposed to say Celiacs? I looked up Coeliacs because you never know, there’s a lot of diseases related to a disease that they come up with similar names for. It’s probably meant to say Celiacs but I just wanted to confirm.

      I was told it was to see how much damage has been caused. But just told CT with contrast not any other name for it.
