The Truth Begin Annatto?

I was wondering if anyone could tell me their experiences with annatto. Since going gluten-free, every time I make tacos or various other meals, I would wake up with swollen eyelids (which is the same reaction I get if I have had gluten). I couldn't figure out what was causing this reaction because I thought all of the items I was cooking with were gluten-free. Well, it dawned on me....they all had yellow cheese in them (annatto). I've read claims saying annatto is gluten-free, isn't gluten-free, can be contaminated, is perfectly safe to eat, etc. Does anyone know what the deal is with annatto??? Has anyone had reactions to it? Thanks!

It is possible to have an allergic reaction to annatto, so perhaps that is one of the foods you are sensitive to.

Annatto does not contain gluten, but some people, including some celiacs, are intolerant to it.

Allisar, I would drop it in case you are sensitive to it. I tend to lean toward uncolored cheese. Hopefully that will solve your problems.

      Oats naturally contain a protein called avenin, which is similar to the gluten proteins found in wheat, barley, and rye. While avenin is generally considered safe for most people with celiac disease, some individuals, around 5-10% of celiacs, may also have sensitivity to avenin, leading to symptoms similar to gluten exposure. You may fall into this category, and eliminating them is the best way to figure this out. Some people substitute gluten-free quinoa flakes for oats if they want a hot cereal substitute.
