I don't have a recipe, but I used Pamela's white cake mix for a birthday cake and it tasted better than any gluten mix I ever tried. I was in to making cakes from scratch before going gluten free, but I haven't had good luck with scratch baking gluten free except for banana bread.

Yeah I saw that when I was searching, I don't know if I can find it sold around here. So it tasted pretty good, like if you're having a birthday party everyone would like it??

My dh made the most awesome chocolate german cake from scratch, omg it's sooo good and moist!!

Oh yeah gluten eaters would like it. I made it for my DH's birthday and he is not 100% gluten free, but he eats gluten free at home for me. I was expecting a gluten free cake to be dry, but this cake remained moist for days afterward. It was VERY sweet tasting, but I had not had any sugar for almost 6 months. I had been using only honey and natural fruit juice for sweeteners, so I think my taste buds might have been really sensitive to the sweetness of the cane sugar. I hope you can find it where you live. I bought it at Farm Fresh (a grocery store in the Southeast) but I have seen Pamela's products at Super K-mart and Kroger as well. So you might try looking at stores you don't normally shop. Or maybe if you contact Pamela's they can give you a list of places that sell it.

You might try Betty Crocker's yellow cake mix just using egg whites.

My favorite cake mixes are Namaste brand. If you can get them locally they are worth trying

Tammy, who is saying they aren't safe for celiacs? Are you saying that is stated on the product packaging itself or that you are reading where people on forums like this one are claiming they aren't safe? Who is "they"?
    • Scott Adams
If a product is labelled "gluten-free" it is considered to be safe for people with celiac disease (in the USA they need to test below 20 ppm). Some people prefer to eat only foods that are certified gluten-free, which are supposed to test below 10 ppm, however, they don't always test this low.

Why are so many gluten free items not safe for celiacs. I read labels all the time. I don’t know how many times they say that and are not safe for people who have celiacs. So confused. Help….

Welcome to the forum, @Jay Heying! What is the reason your doctor is recommending this?
