Spritz Cookies

I found a fabulous recipe for spritz cookies in Bette Hagman's book, but I can't get them to stick to the cookie sheet from the cookie press. I ended up rolling them like sugar cookies, which worked (They were really easy to roll, not too sticky) They are PHENOMENAL, but I want to press them for the designs. Any suggestions?

Is the dough chilled?

Are you using a Silpat or a nonstick cookie sheet? If so, that could be the problem. I have not tried making gluten-free ones. But many years ago I made countless batches of regular Spritz. The best cookie sheet I had for the job was an expensive double walled one. I think it was called Airbake. It was not non-stick.

Another thought would be instead of pressing them to stamp a design into the top. My mom got a cookie stamp somewhere when we were on vacation. It was made of clay and came in various designs. It worked for Spritz cookies. You would merely form a ball, then press it down on the top. It left a raised design.

I have used a lot of bad words trying to get Spritz cookies to come out of the press and stick to the pan, regular or gluten-free, over many years. Rarely does it work exactly as it should. Now I just use the shapes that make a single long "snake" or bar and cut those into pieces. I was so lazy I just rolled out the last batch between sheets of plastic wrap, cut it into squares, and baked them.

I had same recipe same problem! I am glad you posted this!! I too am eager to find a good recipe. My dough was chilled. The only thng I miss about regular flour is its ease of use!

My dough was chilled and I tried 3 different types of baking sheets that I had, thinking the non-stick was the issues too. The dough was "greasy", but I couldn't figure out a way to change that. The dough was SOOO good, though! (well, not raw, but once cooked! I am not a fan of bean flour, so I was hesitant. But it was SOO worth it! ) I love the stamp idea!

I got that book for Christmas and used the same recipe and I loved it. I used the double walled Airbake that I got years ago and did not have a problem. I also like the pecan sandies recipe in the same book.

I would not think store bought yogurt would contain gluten unless it possibly could be through an added flavoring or coloring ingredient. Otherwise, it should be naturally gluten free.  Keep in mind that some companies are capitalizing on people's fears and ignorance (nothing personal intended) by labeling foods "gluten free" that are just that way by the nature of what they are. They are hoping to create a marketing edge over their competitors by adding "gluten free" because they know it may catch attention of those new to the celiac/gluten sensitivity experience without having to cost them anything in the way of changing their manufacturing process or doing testing.

I believe the GFCO does use a common logo for certified gluten free products (those containing not more that 10ppm of gluten) but nothing universal yet from the FDA for standard gluten free products (those containing not more that 20ppm).

I have a One Pot and decided to start using it one day. I was hesitant at first making my own yogurt, but was surprised at how easy it was. I like mine better too.

Because I spend so much time reading every word on all food packaging, I personally would greatly appreciate it if there was one common gluten-free symbol written in large-enough text, and always located in the same place. That alone will make shopping easier and faster. I dread having to buy packaged food. Thank you very much for asking,

I do believe that people are under so much pressure up have a sleeping  pattern ,  with working and how households work these days , but in reality there is no wrong or right at to sleep , I believe your neighbour showed this with such a long life , I do exactly the same  at night many times so I hope I live into my nineties also , I have found one thing in life your body knows what's best so good to listen to wat it needs however unconventional that maybe 🤗
