Dairy Free, Yeast Free Bread Or Rolls Or Biscuits

Well, it's January and I'm trying to cleanse my over-worked system from too much sugar/dairy since Nov.

Anyone have a good recipe for yeast free, gluten-free, dairy free, sugar free bread?

Thanks for any help or suggestions.

I found this online. Would probably work by subbing coconut milk for the buttermilk, but can't figure out what to do about the sugar. More flour mix? Also, I never know what recipes mean by vegetable shortening? What is that? Will light olive oil work or should it be the solid type like Crisco? Or how about applesauce?

Perfect Baking Powder Biscuits!

Ingredients:

• 3 eggs, beaten

• 1/2 cup buttermilk milk (1 tsp lemon juice & enough milk to make 1/2 cup)

• 1 Tbsp vanilla

• 1/2 cup vegetable shortening

• 2 cups flour blend for baking

• 2 tsp guar gum

• pinch tsp salt

• 3 tsp baking pwd

• 1/2 tsp baking soda

• scant 1/4 cup sugar

1. Mix dry ingredients together – from the flour blend to the sugar. Set aside.

2. Using pastry knife, or 2 knives, or a fork, cut in shortening until the consistency of oatmeal.

3. Beat wet ingredients together with whisk.

4. Make a well in dry ingredients, add wet ingredients, mix until JUST blended.

5. drop by 1/3 c. mounds onto sprayed cookie sheet or muffin tin.

6. Pop into preheated 375F oven, for 12-15 minutes.

These are my favorite, favorite, favorite! Especially in the fall with soups and stews!

Enjoy!

It looks like their most recent clinical trial just finished up on 5-22-2025.

Dear Scott,  please check the link https://clinicaltrials.gov/study/NCT05574010?intr=KAN-101&rank=1 What do you think about it?

KAN‑101 is still very much in development and being actively studied. It has not been dropped—rather, it is advancing through Phases 1 and 2, moving toward what could become the first disease‑modifying treatment for celiac disease. https://anokion.com/press_releases/anokion-announces-positive-symptom-data-from-its-phase-2-trial-evaluating-kan-101-for-the-treatment-of-celiac-disease/

Thiamine interacts with all the other B vitamins.  Thiamine and B 6 make a very important enzyme together. With more thiamine and other vitamins available from the supplements your body is absorbing the ones you need more of.  The body can control which vitamins to absorb or not.  You're absorbing more and it's being transported through the blood.   It's common to have both a Thiamine and a Pyridoxine deficiency.  Keep taking the B Complex. This is why it's best to stop taking supplements for six to eight weeks before testing vitamin levels.
