How Do You Know How Much Is Too Much For Food?

There is a certain IU amount for vitamin supplements before one can reach its toxicity level. But is this per day or what? I'm lacking in Vitamin A and C, but how much is too much for the actual food itself? How many oranges or mangoes should I eat per day to reach a sufficient amount of Vitamin A or C? Or am I better off eating one Centrum pill per day?

There is, so far as I know, no toxicity level for Vitamin C as it is water soluble and any amount excess to the body's needs is excreted (too much may give you diarrhea though). 1000 mg in a divided dose is a good start. You might want to read this article Open Original Shared Link on Vitamin A to decide how much you should take. Mostly,of course, it is best to get most of your nutrients from food, but celiacs with their damaged guts cannot do this until they are healed.

You are better off eating one Centrum pill a day AND eating a nutritious and varied diet. Centrum provides the US RDA, which is designed to be safe to take for everyone, and is considered the bare minimum to avoid severe deficiency diseases. Think of the Centrum as insurance, so if your diet falls a little short you won't have get scurvy or rickets. Even taking the RDA, you can still be on the low side for some vitamins, as the RDA is ultra-conservatively safe and may be low for some individuals. A lot of nutritionists object to the low levels in the RDA because the amount of a vitamin to prevent a deficiency, like vitamin C and scurvy, and the amount for optimum health can be quite different.

As far as vitamin C I agree with Mushroom. A few hundred mg a day, or even as much as a gram has been demonstrated to be safe. It may have the added bonus of reducing your risk for cancer and heart disease, although the research is a little controversial.

Vitamin A is a little different. Vitamin A itself is only found in supplements and can be overdosed. The natural food source is carotenoids, which your body converts to A as needed. It is safe to take a pill with the RDA of vitamin A (often provided as a mix of A and carotenoids) and then eat all the orange foods you like because your body just won't convert any more vitamin A than it needs. As far as I know, you cannot overdose on carotenoids although drinking carrot juice by the quart can turn your skin an interesting color.

I looked further into Thiamax Vitamin B1 by objective nutrients and read all the great reviews. I think I will give this a try. I noticed only possible side affect is possibly the first week so body adjusts. Life Extensions carries Benfotiamine with Thiamine and the mega one you mentioned. Not sure if both in one is better or seperate. some reviews state a laxative affect as side affect. SHould I take with my super B complex or just these 2 and multivitamin? I will do further research but I appreciate the wonderful explanation you provided on Thiamine.

There are other Celiac genes. HLA DQ 2 and HLA DQ 8 show up in people from Northern European descent.   People of Mediterranean descent have HLA DQ 7.  People of Asian descent have HLA DQ 9.   There's other Indigenous populations that have other HLA genes that code for Celiac disease.   Are you still having symptoms?   What do you include in your diet?  Are you vegetarian? Are you taking any prescription medication?  Omeprazole?  Metformin?   Do you have anemia?  Thyroid problems? Are you taking any vitamins or herbal supplements?

There are eight essential B vitamins.  They are all water soluble.  Any excess of B vitamins is easily excreted by the kidneys.   Thiamine is Vitamin B 1.  Thiamine is safe and nontoxic even in high doses.  Benfotiamine and TTFD are forms of Thiamine that the body can utilize very easily.   The form of Thiamine in the supplements you mentioned is Thiamine Mononitrate, a form that the body does not absorb well and does not utilize well.  Only about thirty percent of the amount on the label is actually absorbed in the small intestine.  Less than that can actually be used by the body.  Manufacturers add thiamine mononitrate to their products because it's cheap and shelf-stable.  Thiamine and other B vitamins break down when exposed to light and heat and over time.  Thiamine Mononitrate is a form that does not break down over time sitting on a shelf waiting for someone to buy them.  What makes Thiamine Mononitrate shelf stable makes it difficult for the body to turn into a useable form.  In fact, it takes more thiamine to turn it into a useable form.   Gastrointestinal Beriberi is a localized shortage of Thiamine in the gastrointestinal tract.  High carbohydrate meals can result in gastrointestinal symptoms of Gastric Beriberi.  Fiber is a type of carbohydrate.  So, high fiber/carbohydrate snacks could trigger Gastric Beriberi.   Since blood tests for Thiamine and other B vitamins are so inaccurate, the World Health Organization recommends trying Thiamine and looking for health improvement because it's safe and nontoxic.
