Ok, I have cannot have any grains at all, so no rice or corn either. I eat plenty of dairy and eggs. Tapioca seems to not do very well with me, and I shouldn't have potatoes either (although I do once in a while). I am looking for a bread recipe. I have tried a lot of different things. Mainly with flax and squash or zucchini. Since eating a much higher protein diet I have been chronically constipated, but I have lost weight and overall feel healthier, except the constipation. The flax really helps. I can't have any sugar at all except stevia, of which I can't stand unless it is so little that I barely notice but it just gives a hint of sweet.

Here are a couple to get you started. Use the words, flax, almond meal, coconut flour, low-carb or grain-free in your searches. You'll find pizza crust recipes too and cakes and cookies etc.

Elana's Panty will be perfect for you.

She used Almond flour and Coconut flour exclusively...and agave nectar instead of sugar...but you could use your Stevia and adapt the recipes. I've liked the recipes I have tried.

I like cooking with coconut flour for a lot of different things.

Can you use soy? To save money (almond flour and coconut flour are expensive!) I sometimes use a mix of nut flour and soy powder. You have to play around with recipes a lot though, so I hope you're adventurous in the kitchen!

      Thanks for sharing this! Have you started taking the Amneal? I'm curious how it's going for you. My pharmacy gave me the option of Accord, Macleod or Amneal. I didn't realize that Amneal was formerly Lannett, or I might have chosen that one. However, I did read some anecdotal reports that some people had side effects with Amneal, so I chose Accord. I have been taking it for 3-4 weeks and the past 10 days I have developed extreme fatigue/sluggishness, joint pain and some brain fog. I don't know if it is the new levo med, but nothing else has changed. Has anyone else taken Accord levo? Any issues? It seems to fall into the "no gluten ingredients, but we can't guarantee 100%, but it's likely safe category." I'm wondering if it is worth switching to Amneal or at least getting my thyroid levels checked. If the med is causing my symptoms, I'm guessing it's not because of gluten but maybe the potency is different from Mylan and I need different dosing. Accord was recalled for lower potency, but my pharmacist said the pills I have were not part of that lot.
