I Keep "testing" Myself

I don't know why I keep doing this to myself. I am struggling to accept the fact that I cannot handle gluten. I constantly keep eating gluten to try and see if I can handle to try and prove to myself that I can eat gluten without having the problems. Although it never works out. Does anyone have any ideas how I can stop doing this to myself?

It's mind over matter...... focus on what you can have & not what you think you might miss....For me I had to pretend I was in another country & the foods, flours I used were not available so I had to use what was available & learn how to make it taste & look good to eat... I removed all the gluten supplies in my house so it was do or die from starvation....

Some find if they get sick enough times they stop, then others focus on the cancer issues from celiac...

I have a friend who is celiac but never truly followed the gluten-free diet. She looked old beyond her years.. SHe finally after 30 years became very sick & doctors told her her life may very well bepend on her being gluten-free.. She stopped three months ago & she looks 40 years younger... She has her zip back as well...Now she can't believe how she abused her body for so long when she reacted daily eating gluten-free....

Plus now days no one should be craving anything asthere are so many wonderful gluten-free goodies available.

Plus your ideas of what you like in foods may change after you get going strictly on the diet. I craved pizza years ago at first nothing tasted like a greasy Pizza Hut Pizza, now one can find great tasting pizza... I haven't had a pizza in months.... don't even miss it anymore. Pizza used to be a weekly thing at our house!

You control your thoughts ......please don't let celiac disease win or any disease win without fighting for your life....

I did the same thing. It was more out of denial. My mind set was that there's no way something that's supposed to be good for me can be the cause of everything. The funny part is I knew it was a possibility in the back of my mind, since my best friend has Crohns, and can't eat stuff that's supposed to be good for you either. I kept eating whole grain breads, cream of wheat, whole wheat pizza, and then I just couldn't handle it anymore and faced the facts that it really was what was making me sick. After my first 2 months gluten free, I really wish I didn't make myself go through that stage of denial.

Yes, we have been aware that this can be an issue with mushrooms but as long as they are rinsed thoroughly it should not be a problem since the mushrooms don't actually incorporate the gluten into their cellular structure. For the same reason, one needs to be careful when buying aged cheeses and products containing yeast because of the fact that they are sometimes cultured on gluten-containing substrate.

      The one kind of food I had been buying and eating without any worry for hidden gluten were unprocessed veggies. Well, yesterday I discovered yet another pitfall: cultivated mushrooms. I tried some new ones, Shimeji to be precise (used in many asian soup and rice dishes). Later, at home, I was taking a closer look at the product: the mushrooms were growing from a visible layer of shredded cereals that had not been removed. After a quick web research I learned that these mushrooms are commonly cultivated on a cereal-based medium like wheat bran. I hope that info his helpful to someone.

Incidentally, I don't like quinoa either. Reminds me and smells to me like wet grass seed. When its not washed before cooking it makes me ill because of saponins in the seed coat. Yes, it can be difficult to get much dietary calcium without dairy. But in many cases, it's not the amount of calcium in the diet that is the problem but the poor uptake of it.
