How Soon Is One Affected By Cross-Contamination?

I suspect I may have gluten intolerance and I'm on Day 6 of being gluten-free and Day 4 of being dairy-free. Today I was pressured into going out to eat at a restaurant (would have preferred to avoid it because I don't want it to mess me up while I'm trying to figure out what's going on) and I had only some herbal tea and some vegan soup which the cook and server told me was gluten-free. Within ten minutes of eating it my stomach was as bloated as it can possibly go and then I started to get the worst digestive pains I've had in probably a month, which are still going on two hours later. So now I'm wondering ... could this be cross-contamination?? It's true there were a lot of crumbs all over the table and I don't know how careful the servers in the kitchen were, but I was under the impression that one would have to be gluten-free for a while to respond to such small amounts? Is it even possible it could have been gluten or would it have to be something else?

It sure sounds like you were glutened? A spice or thickener in the soup may have had gluten? You'd be surprised how many people don't even know what gluten is. They may think if there's no bread in the soup it's safe? :blink: OR it could be MSG? A lot of people react badly to it, and if your system is under stress right now that could be the cause?

Restaurants are tricky. There are SO many ways that cc could happen. It could be as simple as they used a cutting board for veggies for the soup that had a sandwhich cut on it.

Drink lots of water to help flush your system. I hope you feel better soon.

When I first told the waitress I could not eat gluten, she suggested something with barley in it ... that's not what I ate, though. Thanks for reminding me to drink fluids.

Yeah, it happens to me on a daily basis, sometimes a lot worse than this, but this is the worst it's been in a while. It has been a little better the last couple days, even though I still get bloated every time I eat, it's not as much and I'm not in pain.

Five hours later ... still hurting. Ugh. (I know. It could be worse.)

Watch out for cornflour! In my early days of gluten-free I had a chef tell me it is "only cornflour". And I could tell with in minutes that the cornflour was not just from corn. I reacted badly and was itchy for nearly three weeks.

Since that incident I have been super-diligent about what I eat, drink and put on my skin and it is paying off. Not so itchy, fairly regular digestive system, no more nerve strikes in my torso and left foot middle toe.

I don't really eat out anymore! ((Yesterday at the mall I had a banana and berry yogurt for lunch :D ))

Stick with it!

      What are your daily meals? Guilty pleasure snacks? Protein bars? I feel when looking for gluten free foods they are filled with sugar cholesterol. Looking for healthy gluten-free protein bars. Something to fill since sometimes I feel like not to eat anything. Especially if on vacation and unsure of cross contamination I figure go with a salad and protein bar to fill and play it safe.

      Unfortunately, there is presently no test for NCGS. Celiac disease must first be ruled out. NCGS is thought to be much more common than celiac disease. We know that celiac disease is an autoimmune disorder but the mechanism of NCGS is less clear. Both call for an elimination of gluten from the diet.

      Thanks for your reply Trents…most appreciated.  I am unfamiliar with celiac labs terminology so I wanted to know if the presence of HLA variants (DA:101, DA:105, DQB1:0301 and DQB1:0501) that the labs detected had any merit in predisposing one to be more sensitive to gluten/carbs than the general population?  Also,  I found what you said about NCGS very interesting and I appreciate you mentioning that.  I’ve worked hard to research and advocate for myself with my Hematologist and now with a new GI, since my bowel surgery and to maintain my Vitamin B12 health concurrent with keeping my levels of Iron in the optimal range. I’ve been tested for SIBO (do not have it), biopsy showed negative for HPylori, and have had Fecal studies done (nothing showed up) and I understand how a loss of a large amount of bowel could be highly impacting re: SIBO, malabsorption and motility issues. So I’ve managed pretty well diet and elimination-wise until just recently. That said, this new problem with extreme bloating, distention and upper girth, NAFLD just occured over the last 4 months so it is new for me and I thought celiac might be a possible issue. I’ll probably just continue on in this less gluten/carbs seem to be better for me and see how reintroducing certain foods go.  Thanks again.

      Thanks bumped it up and now take all 3 vitamins 2 capsules each with the super b complex at breakfast. I will give it some time to see if I notice a difference. I am going to track my eating daily diary on a myfitness pal app to see if the "claimed" gluten free foods bother me or not.

      Please can anyone help. I was diagnosed on 23rd December and I am trying my best to get my head around all the things to look out for. I have read that yeast extract is not to be eaten by coeliacs. Why? And is this all yeast extract. Or is this information wrong. Thanks.
