Update: First Gluten Free Shopping Trip

Just thought I would update everyone! Been back at school 2 days and my teachers have been so supportive. Now to my grocery trip. I live in Utah and we don't have a lot of things. So I thought we wouldn't have much gluten-free at my normal grocery store. We had an entire isle! I was very suprised. I heard Van's frozen waffles were good and I used to eat eggos all the time. This morning I had one and my review is: They are 10 times better then whole wheat eggos which I had tried before being diagnosed, Van's are crumbly, and a little less sweet then normal eggos, butter and syrup make everything better. We bought all our normal recipes and tonight we are having beef stew, with gluten free gravy instead of the normal gravy it calls for. For lunch I had a corn tortilla with cheese on it. So a cheese quesida. Funny thing is I hate flour tortillas and have always ate cheese quesidillas on corn ones. Several kinds of potato chips are gluten-free. My favorite not being one. I love Barbeque chips but I'll pretend to love Sour Cream and Onion. :D For all the other newbies who are wondering whether they need to quit dairy or not, I quit dairy before I was diagnosed. Any time I would drink milk I would bloat within minutes and feel so sick. I couldn't eat anything after drinking milk. So I say: If it makes you sick don't drink it. Go gluten-free for a few weeks while still drinking milk and see how you feel. I know for me its hard getting enough carbs in and milk helps alot. I have no reaction to cheese or sour cream. Anything that isn't straight milk and I am fine. It's all about how you feel. I bought Udi's frozen bread but haven't eaten any. It's in my freezer and I was wondering do you guys unthaw it or pop it in the toaster frozen? Do you always toast it or is it good for sandwhiches? We also have a local gluten-free maker named Grandpas Kitchen. Have you ever heard of it or tried it? Give me reviews. We bought grandpas kitchen pancake mix and a flour blend. We bought betty crocker chocolate chip cookie mix. Reviews on any of this would be cool. Tell me what else you like too!

If you live in the Salt Lake City area, there are several bakeries and a gluten-free store. The store is in Larson? A bakery with lunches in Sandy. A restaurant near ?

If you live near there, let me know & I'll get the info.

On the bread..you can toast frozen or leave it on the counter for a few minutes to thaw. Or if making a sandwich for school, make it on the frozen bread & it will thaw by lunch.

A lot of stuff we ate was gluten-free already or was easier tweaked. A lazy snack is put a slice of cheese or some shredded cheese on a corn tortilla and microwave, Fold quickly. Sometimes I put salsa on it before I microwave. Or some cooked chicken with the cheese.

IMO, Betty Crocker makes a good product.. Dairy may be an issue in many processed foods... Check out the Gluten Free BuckWheat flour & pancake mixes... Beware that gluten-free portions of processed foods are smaller or one's waist may get wider...

I've heard of the bakery in Sandy and plan to try it out in January when I go up to visit friends and family. The Betty Crocker cookies, brownies and cakes are great. In Salt Lake is one of The Original Pancake House restaurants. They have gluten free pancakes that ae fantastic. I always make corn tortilla quesadillas flat (2 tortillas) and cut like a pizza. The kids will eat them with me like that. I also love to go to The Old Spaghetti Factory in Trolley Square in Salt Lake as well. As I said in a previous post, they have gluten free noodles and I was told that all their sauces (except meatball sauce) are gluten free and no croutons on the salad of course. I get the bread, but only eat it toasted. This is a personal opinion, but it seems to have the consistency of the regular old wheat flour bread when warmed. It has always seemed too dry just thawed. We had a beach trip one day and my wife had made sandwiches for the family. This was when we were first getting used to the gluten free thing. I got my sandwich out of the cooler and took a bite,,,,,,,,,,,,,,,. It was too dry for me and I just ate the meat and cheese out of it. There is Kettle Brand potato chips in all different flavors including Bar-B-Q, it says gluten free on the front-side advertisment. I also buy the UDIs bagels. Their great for breakfast.

I like to put something moist on my bread. Cream cheese, flavored cream cheese like Aloutte, Better Buttah ( flavored butter), iceberg lettuce, jelly.

I grew up in West Valley & still have family there, so am always interested in hearing about what gluten-free options are available there.

Dinty Moore Beef Stew is labeled gluten-free.

If I remember right, Lay's stax bbq chips are labeled gluten-free. (please correct me if I'm wrong.)

Winger's should have a gluten-free menu-- ask for it when the server seats you.

My favorite breakfast is Van's toasted waffles, with a quick peanut butter spread and jelly or honey. Throw a half banana, or a strip or two of bacon, and you can eat it on the run as a sandwich......and yummy.

Sounds like you are good Booghead! :) And lucky to have such gluten free options available.

I read somewhere that Lay's Stax are gluten free too! I will have to grab some.

I love Wingers. We had one right by us in North Ogden and they sold it to someone else and then it became a dive and now its out of business. But there is one in Brigham City only a 30 minute drive from here. I am excited to try it out! Though my favorite meal is probably not gluten free. >.< I like all their salads too.

Salt Lake CIty is about an hour and 15 min. away from us. We go once or twice a year and a visit always includes going to the old spagetti factory. I am glad to here they have gluten free! Never been to the pancake house but will have to try it! Thanks for the input. If I remember West Valley City is about 2 1/2 hours from here. Went there on a field trip and the majority of the field trip was on a bus :rolleyes: Sandy isn't too far out of SLC so when we are up there I will insist on going to that bakery.

I don't live there, I just go skiing there.

There is a big grocery chain there that seems to have alot of gluten-free stuff. I can't think of the name but I think its in my notes. Maybe thats your local grocery.

Here's the store. Its in Layton. They gave me a list of places that have gluten-free food - restauraunts and bakeries. You might email them for suggestions. They are a really nice family. Jenny has kids about your age so mention your age and maybe a 2 sentence intro if you email.

Udi's bread I always pop into the toaster frozen . For sandwiches I also toast it lightly.

Bisquick makes a mix that although is expensive is quite good. Betty Crocker mixes are also quite good. (Both do contain soy)

Van's Waffles are great, I take a toasted one to work and put apple butter on it when I'm ready to eat. I also used them a few weeks ago as bread crumbs for stuffed pork chops. (when I was new and didn't have bread crumbs). A great bread crumb is Aleia's, you can always save the ends of bread (I like Udi's) and make your own. I've tried Brown Rice Tortillas and they are horrible. I've used Maria and Ricardo's soft taco tortillas and they are great, I'm lucky enough to have a Whole Foods and Trader Joe's within 20 miles.

      Hello all! My life in the last five years has been crazy. I got married in 2020 at the age of 27, pregnant with our first child almost two months later, gave birth in 2021. We had another baby in April of 2023 and our last baby this March of 2025. I had some issues after my second but nothing ever made me think, "I should see a doctor about this." After having my last baby this year, my body has finally started to find its new rhythm and balance...but things started to feel out of sorts. A lot of symptoms were convoluted with postpartum symptoms, and, to top it all off, my cycle came back about 4m postpartum. I was having reoccurring migraines, nausea, joint pain, numbness in my right arm, hand and fingers, tummy problems, hives. I finally went to my PCP in August just for a wellness check and I brought up my ailments. I'm so thankful for a doctor that listens and is thorough. He ended up running a food allergy panel, an environmental respiratory panel, and a celiac panel. I found out I was allergic to wheat, allergic to about every plant and dust mites, and I did have celiac. I had an endoscopy done on October 3 and my results confirmed celiac in the early stages! I am truly blessed to have an answer to my issues. When I eat gluten, my brain feels like it's on fire and like someone is squeezing it. I can't think straight and I zone out easily. My eyes can't focus. I get a super bad migraine and nausea. I get so tired and irritable and anxious. My body hurts sometimes and my gut gets bloated, gassy, constipated, and ends with bowel movements. All this time I thought I was just having mom brain or feeling the effects of postpartum, sleep deprivation, and the like (which I probably was having and the celiac disease just ramped it up!) I have yet to see a dietician but I've already been eating and shopping gluten-free. My husband and I have been working on turning our kitchen 100% gluten-free (we didn't think this would be so expensive but he assured me that my health is worth all the money in the world). There are still a few things to replace and clean. I'm already getting tired of reading labels. I even replaced some of my personal hygiene care for myself and the kids because they were either made with oats or not labeled gluten-free. I have already started feeling better but have made some mistakes along the way or have gotten contamination thrown into the mix. It's been hard! Today I joked that I got diagnosed at the worst time of the year with all the holidays coming up. I will just need to bring my own food to have and to share. It will be okay but different after years of eating "normally". Today I ordered in person at Chipotle and was trying not to feel self-conscious as the line got long because they were following food-allergy protocols. It's all worth it to be the healthiest version of myself for me and my family. I would be lying if I said I wasn't a little overwhelmed and a little overloaded!  I am thankful for this community and I look forward to learning more from you all. I need the help, that's for sure!

      On the AIP diet, all processed foods are eliminated.  This includes gluten-free bread.  You'll be eating meats and vegetables, mostly.  Meats that are processed, like sausages, sandwich meats, bacons, chicken nuggets, etc., are eliminated as well.  Veggies should be fresh, or frozen without other ingredients like sauces or seasonings.  Nightshade vegetables (eggplant, potatoes, tomatoes, peppers) are excluded.  They contain alkaloids that promote a leaky gut and inflammation.  Dairy and eggs are also eliminated.   I know it sounds really stark, but eating this way really improved my health.  The AIP diet can be low in nutrients, and, with malabsorption, it's important to supplement vitamins and minerals.

      Thank you for responding and for prayers.  So sorry for your struggles, I will keep you in mine.  You are so young to have so many struggles, mine are mild by comparison.  I didn't have Celiac Disease (celiac disease) until I had my gallbladder removed 13 years ago; at least nothing I was aware of.  Following surgery: multiple symptoms/oddities appeared including ridges on fingernails, eczema, hair falling out in patches, dry eyes, upset stomach constantly and other weird symptoms that I don't really remember.  Gastro did tests and endoscopy and verified celiac disease. Re heart: I was born with Mitral Valve Prolapse (MVP) and an irregular heartbeat, yet heart was extremely strong.  It was difficult to pick up the irregular heartbeat on the EKG per cardiologist.  I had Covid at 77, recovered in 10 days and 2 weeks later developed long Covid. What the doctors and nurses called the "kickoff to long Covid, was A-fib.  I didn't know what was going on with my heart and had ignored early symptoms as some kind of passing aftereffect stemming from Covid.  I was right about where it came from, but wrong on it being "passing".  I have A-fib as my permanent reminder of Covid and take Flecainide every morning and night and will for the rest of my life to stabilize my heartbeat.

      When I accidentally consume gluten it compromises the well-being of my heart and arteries. Last time I had a significant exposure, about six months ago, I had AFib for about ten days. It came on every day around dinner time. After the ten days or so it went away and hasn't come back.  My cardiologist offered me a collection of pharmaceuticals at the time.  But I passed on them.

      So I should not eat my gluten free bread?  I will try the vitamins.  Thank you all so very much for your ideas and understanding.  I'm feeling better today and have gathered back my composure! Thank you kitty kitty   I am going to look this diet up right away.  And read the paleo diet and really see if I can make this a better situation then it currently is.
