Is There Suck Thing As Gf Cake?

hey im new to the gluten-free diet ive only been on it for 4 days and im finding it hard to find gluten-free free things ,im also lactose .My b day is on monday and my mom and dad want to get me a cake is there such thing as a gluten-free cake?

Yes there are gluten-free cakes. The best I've tried is The Really Great Food Company Chocolate Cake Mix. This is also dairy free.

But as your b-day is monday, you should probably try to make one from scratch, as you don't have time to make an online order. Do you have gluten-free flour? Rice flour and potato starch is a typical blend for gluten-free cakes. They also tend to use more eggs and cook at a lower temp than gluten cakes. I have ruined cakes by baking them at the recommended 350 degrees. I have found that 325 works much better and I add an extra 10 minutes or so to the baking time. Otherwise they are gummy in the center. Yuck!

Hey thanks for the links and advice lol i dont have any of the potato flour yet but i think im going ot get some over the week.Ill probly just skip getting a cake this year.

You can usually find potato starch in the Kosher food section of most supermarkets. But you can also find it at healthfood stores and online. Potato starch is different than potato flour. The starch is what is used most often, so be careful not to get the potato flour. If it says potato starch flour then that means it is potato starch.

hey there.... I just bought a gluten-free cookbook that has some pretty good recepies. Dairy free, egg free, yadda yadda... If you can think of some cake or goodie recepies lemme know and Ill send em to you if theyre in there. :D

I actually make a flour mix that includes potato starch flour AND potato flour (and tapioca flour, and brown rice flour and white rice flour...basically everything I can find).

I think that the Gluten-Free Pantry mixes are pretty good -- my favorite is actually the chocolate chip cookie/cake mix, following the directions for the cake.

Here's a flourless recipe that's just incredible:

in heatproof bowl in pan of simmering water, melt 6 oz. semi-sweet chocolate with 3 tablespoons water or coffee and 1 teaspoon gluten-free vanilla.

meanwhile separate 6 eggs and beat the whites into soft peaks.

      Scott, I agree with everything you said except the term "false negative". It should be a "true negative" just plain negative. I actually looked up true/false negative/positive as it pertains to testing. The term "false negative" would be correct if you are positive (have anti-bodies) and the test did not pick them up. That would be a problem with the "test" itself. If you were gluten-free and got tested, you more than likely would test "true" negative or just negative. This means that the gluten-free diet is working and no anti-bodies should be present. I know it sounds confusing and if you don't agree feel free to respond.

      I realized it is actually important to get an official diagnosis because then insurance can cover bone density testing and other lab work to see if any further damage has been done because of it. Also, if hospitalized for whatever reason, I have the right to gluten-free food if I am officially celiac. I guess it gives me some legal protections. Plus, I have 4 kids, and I really want to know. If I really do have it then they may have increased risk.

      Been off this forum for years. Is it that important that you get an official diagnosis of something? It appears like you had a trigger (wheat, gluten, whatever) and removing it has resolved your symptom. I can't speak for you, but I had known what my trigger was (gluten) years before my diagnosis I would just stay gluten-free and get on with my symptom free condition. I was diagnosed over 20 years ago and have been symptom free only excluding wheat, rye and barley. I tolerate all naturally gluten free whole foods including things like beans which actually helps to form the stools.

      No coincidence. Recent revisions to gluten challenge guidelines call for the daily consumption of at least 10g of gluten (about the amount in 4-6 slices of wheat bread) for a minimum of 3 weeks. If possible, I would extend that two weeks to ensure valid testing.

      Thank you both for the replies. I decided to bring back gluten so I can do the blood test. Today is Day #2 of the Challenge. Yesterday I had about 3 slices of whole wheat bread and I woke up with urgent diarrhea this morning. It was orange, sandy and had the distinctive smell that I did not have when I was briefly gluten free. I don't know if it's a coincidence, but the brain fog is back and I feel very tired.
