I have been reading posts for a week or so trying to get a handle on the gluten free diet. I do not have celiac. I have everything else but not celiac.

First off: I have LUPUS & Fibromyalgia. I have many food allergies - I'm allergic to: Gluten, Almonds, Asparagus, Barley, Lamb, Malt, Milk (cows), Onion, Vinegar, Pepper, Watermelon, Wheat, Yeast(Bakers & Brewers), Yogurt, Tomato & Corn. I also have many air born allergies.

I have been researching online & I'm reading that the gluten allergy is rare. It is usually a sensitivity or intolerance. My doctor sent my blood work to Alletess & they sent me a report of my allergens.

I have know this for a while and any symptoms were always just chalked off to being caused by my LUPUS & I was given scipts. But while reading through the posts on this forum - I'm pretty sure that most of them were because of my allergies & the food that I was eating. I tried to keep a log to see what was actually bothering me but then was told that I could react anytime up to 72 hours so that made it really hard.

My nail beds are rippled & when I asked my doctor she told me that I probably had a fungus. Which I thought was ridiculous - all ten?

My Vitamin D level was at 15 for a long time & after taking 50,000 btu's for a year, it finally went back up to 30. Should be over 30.

My LUPUS doctor told me that my body doesn't absorb Calcium or Folic Acid correctly - so I take extra of those.

Endoscope with a dx of spastic colitis.

I have always had long periods of time where I would wake up in the morning high stomach ache. But as soon as I was up, it would go away. Had an Upper GI with a dx of weak flap/muscle where the esophagus empties into the stomach.Which causes GERD, which causes sore throats, ear aches, fatigue.

Then referred to have a stomach emptying test - dx of gastroparesis. after 5 hours still had 35% in my stomach.

I wake in the morning with major swelling in and around my eyes - so much that I get sacs of fluid above & under. This they said was my sinuses.

I have headaches frequently - especially when it is going to rain.

So about 3-4 weeks ago I just had enough & pulled out my allergy information and decided to give it a go. I have been very strict not to eat any gluten at all & I have to say I feel much much better. The biggest change is that I have absolutely no problems digesting food or going to the bathroom without taking any medication. In fact I haven't taken anything to go to the bathroom since I kicked gluten out & that alone is HUGE for me.

So I feel like I have a handle on the gluten part of my diet. I have been eating veggies & fruits mostly but because I have an allergy to Cow Milk, yeast, etc., I really am having a hard time coming up with stuff to eat. Everything that they offer to substitute is something that I'm allergic to.

Plus I feel like I can eat for hours and I'm still hungry. Can't seem to get full. But I'm not giving up because now I'm actually afraid to eat anything I'm allergic too because my list of foods that I can eat has Cheddar Cheese on it - so I cooked a hamburger & put 1/2 slice of cheddar on it & wrapped it in lettuce. I had a reaction a couple hours later that was 10 times worse that I used to have. I'm not even sure if it was the cheddar or maybe the grease from the hamburger?

Alletess is the company that did my blood work sent me a binder of food that I can have & can not have. Cheddar cheese is on the list - along with cottage cheese. I thought that maybe it was processed differently & that is why it says that I can have it? I love cottage cheese.

Does anyone know if there is a difference? Also, I'm allergic to vinegar, onion & pepper - I'm having a rough time finding any salad dressing for salads or sauces to dip my chicken or meat in. Any suggestions would be so appreciated.

My last question is there a chance that after being on this diet for some time that the allergy will go away. Like maybe my system just needs a break? Probably just wishful thinking on my part :)

You might be pleasantly surprised at how gluten-free improves your system. Allergies can come and go and no allergy list from a blood test will be perfect. The tests are meant to be a guide to an elimination diet. I notice you reacted to wheat, gluten, barley, and malt, which does suggest gluten intolerance. Take out gluten for good - the stuff is no good for you since you have an autoimmune disease already.

Take out everything else until you feel better. Then talk to your doctor about the safety of challenging the foods that are in your binder one at a time. B)

It looks like you can have beans and rice? Rice cakes? How about potatoes? Cashews are botanically different from tree nuts so those might work.

You can make an olive oil and lemon juice dressing. Then use herbs on your safe list like oregano, garlic, parsley, cilantro, or thyme. :) Guacamole is good too. I make it with avocado, lime, and a little garlic. Looks like you could have hummus too. If you want something tart, try either homemade or Bubbie's brand sauerkraut. It doesn't have vinegar. The tartness comes from lactic acid made by bacteria. Open Original Shared Link

It looks like Aletess tests cheddar and cottage cheese separately. Rennet makes a difference maybe? Or the aging? I don't know. Cheddar has lots more amines and tyramine in it but that's not an allergy issue.

      Have you tried Pure Encapsulations supplements? This is a brand my doctor recommends for me. I have no issues with this brand.

      plant sources of calcium, such as spinach, have calcium bound to oxalates, which is not good. best source of calcium is unfortunately dairy, do you tolerate dairy? fermented dairy like kefir is good and or a little hard cheese. i do eat dairy, i can only take so much dietary restriction and gluten is hard enough! but i guess some people do have bad reactions to it, so different for everyone.

      i take b12, folate, b2, b6, glycine, Nac, zinc, vk2 mk4, magnesium, coq10, pqq, tmg, creatine, omega 3, molybdnem (sp) and just started vit d. quite a list i know.  I have high homocysteine (last checked it was 19, but is always high and i finally decided to do something about it) and very low vitamin d, 10. have been opposed to this supp in the past, but going to try it at 5k units a day. having a pth test on friday, which is suspect will be high. my homocysteine has come down to around 9 with 3 weeks of these supplements and expect it to go down further. i also started on estrogen/progesterone. I have osteoporosis too, so that is why the hormones.  anyway, i think all celiacs should have homocysteine checked and treated if needed (easy enough with b vit, tmg). homocysteine very bad thing to be high for a whole host of reasons. all the bad ones, heart attack , stroke, alzi, cancer..... one of the most annoying things about celiacs (and there are so many!) is the weight gain. i guess i stayed thin all those years being undiagnosed because i was under absorbing everything including calories. going gluten-free and the weight gain has been terrible, 30#, but i'm sure a lot more went into that (hip replacement - and years of hip pain leading to inactivity when i was previously very active, probably all related to celiacs, menopause) yada yada. i seemed to lose appetite control, like there was low glp, or leptin or whatever all those hormones are that tell you that you are full and to stop eating. my appetite is immense and i'm never full. i guess decades or more ( i think i have had celiacs since at least my teens - was hospitalized for abdominal pain and diarrhea for which spastic colon was eventually diagnosed and had many episodes of diarrhea/abdominal pain through my 20's. but that symptom seemed to go away and i related it to dairy much more so than gluten. Also my growth was stunted, i'm the only shorty in my family. anyway, decades of malabsorption and maldigestion led to constant hunger, at least thats my theory. then when i started absorbing normally, wham!! FAT!!!

      Great advise there I agree with the aniexty part, and the aura migraine has I suffer both, I've also read some great books that have helped I'm going too look the one you mentioned up too thankyou for that, I find a camomile tea just a small one and a gentle wind down before bed has helped me too, I suffer from restless leg syndrome and nerve pain hence I don't always sleep well at the best of times , racing mind catches up I have decorated my whole house in one night in my mind before 🤣 diet changes mindset really help , although I have to say it never just disappears, I find once I came to terms with who I am I managed a lot better  , a misconception is for many to change , that means to heal but that's not always the case , understanding and finding your coping mechanisms are vital tools , it's more productive to find that because there is no failure then no pressure to become something else , it's ok to be sad it's ok to not sleep , it's ok to worry , just try to see it has a journey not a task 🤗

      I agree there I've tryed this myself to prove I can't eat gluten or lactose and it sets me back for about a month till I have to go back to being very strict to settle again
