My Husband Just Found Out He Has Celiac Disease...

Hi, my husband just confirmed last week that he has Celiac Disease...he also have Type 2 Diabetes, but Dr just started him on insulin a few months ago. He also thinks he is pretty much symptom free. Sadly, his mother has many symptoms and is going to get tested soon. We also have 3 young children who we will eventually get the bloodwork done on.

We know not a lot about this disease, and wanted to see where is the best place to buy breads? Do you make your own? Is lunch meat okay? He brings sandwiches to work everyday and is confused right now. He's also a big time snacker :)

Any tips/advice for newbies? I can see theres a lot of great information on this board - so we are going to start reading away.

I would like to offer this thread to you as some basic starting information. I included shopping guides, some menu suggestions and safe foods for snacking.

Many people like Glutino Genius Bread, Kinnikinnick, Canyon Bakehouse, UDI's and Rudi's brand breads. Many bake their own.

You need to learn more about controlling his diabetes. I don't think a sandwich is supposed to be the best lunch for someone with diabetes becasue of the carbs. Gluten-free breads are VERY starchy so they are generally worse for blood sugar than wheat.

Have you considered sending him ow-carb gluten-free dinner leftovers and some cut veggies with dip or nuts?

If you need low carb, gluten-free bread try reading the Elana's Pantry blog. She has a few almond bread recipes.

Here are a few more threads to get you started. Meat and veggies is a good way to go when starting out. Avoiding potatoes would be a good idea though since he probably wants to go low carb for a while.

This diabetes forum has good info and a chat feature which is nice. They have some long time diabetics on the chat that are real nice and give great advice.

      I hadn't been eating gluten free before having the antibody test done. I started eating gluten free after having the test done because the gastro PA told me to eat gluten-free for 6 months. I'm now 3 months in.

      I tend to agree with RMJ. Your doc took the reasonable and practical approach to diagnosis. All things considered, it was the right way to go. However, if you have first degree relatives that show signs of possible celiac disease, urge them to get formally tested before they start the gluten free diet.

      It sounds like you have a very reasonable GI doctor, who diagnosed you based on family history and symptoms after eating gluten. I would consider you lucky! The other option would be to make yourself very sick by doing weeks of a gluten challenge prior to an endoscopy.
