So, before I knew about my coliacs, I couldn't gain weight. I used to be SOO hungry I'd be practically bingeing, always craving sweet and chocolaty foods..and food in general. I didn't have an E.D....I was just SO hungy. Anyways, I was underweight for my height and I was trying to gain weight.

Now, after going gluten-free even though it hasn't been too long, my appetite has gone back to normal, but I'm gaining weight. I was more than happy to go 2lbs over my healthy weight, but now it's going UP and FAST....is this temporary? I'm not eating over my calculated calorie limits or whatever makes you gain.

Your body was in the starvation mode while you were sick. So, it's over compensating now. It should settle down. And be careful of gluten free processed foods, cause their really high in calories.

Starvation-mode? Ha! Never knew there was such a thing :P

I think I'm starting to settle down now, I think. My weight has been the same since last I weighed myself. I think it may be water weight, too.

For what it's worth, it doesn't bother me. It's better than looking like a rake painted white :lol:

Update! I am still gaining and now I'm starting to be greightened. Is this normal? My thyroid test came back as just fine! Maybe it's water weight? If so how do I rid myself of it?

I am not sure how to lose water weight but regular weight gain in my (over) simplified view of the world is just more calories consumed that calories burned. I eat a fair amount of protein and a ton of vegetables (paleo). Occasional fruits, no booze, zero grains and zero starchy vegetables such as potatoes. I do eat quite a few carrots though, not sure if those should be included in starchy veges or regular veges. Anyway, I dropped about 5 pounds in the first three months, pesky belly fat pounds those.. I have also started lifting weights after learning that more muscle fiber increases metabolism and thus, increases calorie burn while at rest. Good luck.

Yep, me too. When I swap out starchy foods for veggies I lose weight. If I eat potatoes and rice, the weight comes right back on.

Very well.

I haven't changed my eating plan ever since going gluten-free (other than using gluten-free food) but I also read that I'm probably eating more without noticing, because that's part of the healing stages.

I will take the advice though and try to eat much less starch!

      I have found that in addition to gluten, I am sensitive to inulin/chicory root fiber. I wondered why I had gastrointestinal symptoms after drinking a Chobani yogurt drink - much like being glutened. Happened at least twice before I figured out that it was that chicory root fiber additive. I do not react to ordinary dairy, yogurt, etc.  For the holidays, I will only be baking gluten-free treats. I got rid of all gluten-containing flours, mixes and pastas in my kitchen. Much easier to avoid cross-contamination that way!

Since the protein bar was the only new variable, it’s a strong suspect; it's worth checking if it contains ingredients like sugar alcohols (e.g., maltitol, sorbitol) or certain fibers (inulin/chicory root) that are notorious for causing acute digestive upset, even in gluten-free products. For your holiday baking, your plan is solid: bake the gluten-free items first, use entirely separate utensils and pans (not just washed), and consider color-coding tools to avoid mix-ups. Additionally, store your gluten-free flours and ingredients well away from any airborne wheat flour, which can stay in the air for hours and settle on surfaces. Keep listening to your body and introducing new packaged foods one at a time—it’s the best way to navigate and pinpoint triggers on your journey.
