Looking For A Yummy Muffin Recipe Using Almond Flour

I've tried several from a few websites, but still have not found the perfect recipe. I would prefer a tried and true recipe using mainly almond flour. Can anyone help?

Besides Elana's website, which is great, I make this recipe all the time, and everyone I know who has these muffins loves them: Open Original Shared Link I do the version with eggs and honey, and the brand of coconut oil makes a difference, though I don't remember which my favorite is.

If you think of it, please let us know. Thx. I always use light tasting olive oil, but am willing to try coconut oil if the end product really does taste better :)

If you're not looking to make a whole batch, I like this one.

Almond Flour Single Servig Spiced Muffin

2 Tbsp almond flour or meal

1/2 tsp baking powder

2 Splenda packets or 1/2 tsp granular sugar

1 tsp cinnamon

1 lg egg

1 tsp vanilla

1 tsp margarine or butter, softened

Mix all ingredients well in a small bowl. Place in a remekin and microwave on high for 1 minute.

I can't do any sugar so I omitted the vanilla, until I can get an organic one. I felt the muffin was a little bland so I increased the Splenda and cinnamon to 2 tsp. Love it! And so quick and easy.

I also have a recipe for a pumpkin muffin that makes 12 in the oven. Haven't tried it yet, though. Let me know if you want it.

      I was taking medicine for sibo but it was not agreeing with my stomach at all.Was on gabapentin but it amps me up.I was taking in morning because it wasn't allowing me to sleep.This has always been an issue with medicine and me.Even going to dentist, the good shot that numbs you once, I can't take because it makes my heart beat fast and I  get the shakes.I have to take the crappy stuff and get injected always more than 4 times always.Its infuriating

      I showed one doctor I went to once because completely clueless of celiac disease and yes that one was connected to a well known hospital and she said oh thats just a bunch of people that think they are celiac coming together. I said um no they have doctors and knowledge behind what is being written. So bay area is Downplaying this site! SADLY

      If you successfully digest gluten with enzyme supplements so it won’t give you side effects, your challenge won’t be worthwhile because the digested fragments of gluten also won’t stimulate antibody production or cause intestinal damage.

      You can search this site for prescriptions medications, but will need to know the manufacturer/maker if there is more than one, especially if you use a generic version of the medication: To see the ingredients you will need to click on the correct version of the medication and maker in the results, then scroll down to "Ingredients and Appearance" and click it, and then look at "Inactive Ingredients," as any gluten ingredients would likely appear there, rather than in the Active Ingredients area. https://dailymed.nlm.nih.gov/dailymed/
