Any Campers Out There?

We are going camping this weekend for the first time since I've gone gluten-free. Any fellow campers out there? And what all do you bring to eat? We have a camper with an entire kitchen set up so I can cook. I would like to have special things like everyone else has. We always get junk that we wouldn't otherwise have at home. I know a few things of junk food I can grab. If I could get some more ideas from yall, that would be great.

On a side note, I survived my first cookout yesterday. I took my own food and everyone completely understood (it was family). I told them abbout accidently glutening myself Friday and they were shocked at how bad I reacted.

I am also going camping for the first time in a few weeks. I figure my usual egg omelet is fine for breakfast. If you BBQ for dinner then you should be able to have a lettuce burger or kebab along with everyone else. With a BBQ you can cook all sorts of veggies and meats and eat them the next day for lunch.

We got a foil grill pan from Walmart about 3 for $3. They have little holes on the bottom you can open to let grease out. Hub put them on the grill before heating it up. Lined the holes in the pan up with the spaces on the grill and then open the holes bigger for burgers. Nothing touched the dirty grill and you can throw the pans away.

I have posted this before and they are popular. Especially if you need to be careful of someone else's grill and what may be lingering there

Foil Camper Dinners:

posted these before for a Boy Scout so maybe you saw them. Just put the frozen veggies in the cooler & they do fine. You can even freeze the meat if it will be a day or 2 til you cook. The adults are still talking about howgood the chicken ones were as they always do the hamburger. The key to tasting good is a little liquid like BBQ sauce, salsa, broth.

Chicken Fajita:

2 raw chicken tenders or chicken breast cut (1/4 to 1/2 lb.)

1 cup frozen pepper & onion mix (could do fresh but this is less CC potential)

1/2 cup quick/minute brown rice

3-4 tbsp salsa

Stir Fry:

Same as above but use stir fry frozen vegs and gluten-free (LaChoy) Soy sauce & chicken broth or water for 4 tablespoons

And of course the classic foil dinner:

1/4-1/2 lbs hamburger patty

1 cup froz or fresh veggies

1 cup thin sliced or small square cut potatoes

1/4 -1/2 cup gluten-free BBQ sauce, broth or salsa

Cook these foil packets on top of the coals for 20-30 minutes. Don't even need plates!

Have also known people who do these in the home oven or grill.

Kinnikinnick makes a product called S'moreables . . . basically gluten free graham crackers. This is what my daughter usually uses for S'mores. The other thing that both my kids do is roast a marshmallow and when it gets hot and gooey, stick a segment of hershey bar in it, give it a few seconds to melt (maybe even keeping it over the fire a bit) and then eat it. Less calories since you don't have the cracker part . . . so, yeah, "diet" s'mores.

We stole this idea from the county fair but it's great for camping. We like taco in a bag. You take a individual Frito bag and open it down on side. (the top would be too narrow). Add lettuce,taco meat , sour cream, salsa, tomatoes, etc. Eat it straight out of the bag around the campfire. The ones at the fair were the mid size 99 cent ones like at the convience store but if you have small kids then I'd do the lunch sized ones. Oh and for breakfast google gluten free wake and bake. You make it the night before and then just stick it in the oven the next morning.

These are awesome ideas! Ill add something for those who also camp that might have never done this.

We call them hobo meals. We take a big piece of tinfoil and put ground meat (we use turkey or chicken) add carrots, sometimes bell peppers and chunks of potatoes. The fellas add hot peppers to theirs to give it a kick. We then add seasonings. I always have used garlic powder, onion powder, and lemon pepper. Wrap it up in a pouch and put them on the grill for about an hour or so. We use a marker to label everyone's pouch. Each individual makes up their own package so the CC for me will be next to nothing since everything but some of the seasonings they use is safe for me. The kids LOVE this because they can make their own meal and put whatever they want in it, or don't want in my son's case. We love this so much that we even do it here at the house but in the oven, unless DH is in the grilling mood.

      So the tTG-IGA at 28 is positive for celiac disease. There are some other medical conditions that can cause elevated tTG-IGA but this is unlikely. There are some people for whom the dairy protein casein can cause this but by far the most likely cause is celiac disease. Especially when your small bowel lining is "scalloped". Your Serum IGA 01 (aka, "total IGA") at 245 mg/dl is within normal range, indicating you are not IGA deficient. But I also think it would be wise to take your doctor's advice about the sucraid diet and avoiding dairy . . . at least until you experience healing and your gut has had a chance to heal, which can take around two years. After that, you can experiment with adding dairy back in and monitor symptoms. By the way, if you want the protein afforded by dairy but need to avoid casein, you can do so with whey protein powder. Whey is the other major protein in dairy.

      hi, i want to say thank you to you and @trents   . after 2 phone calls to my GI, her office called me back to tell me that a blood test was “unnecessary” and that we should “follow the gold standard” and since my biopsy did not indicate celiac, to follow the no dairy and sucraid diet. i luckily have expendable income and made an appt for the labcorp blood test that day. i just got my results back and it indicates celiac disease i think 😭   im honestly happy bc now i KNOW and i can go gluten free. and i am SO MAD at this doctor for dismissing me for a simple blood test that wouldn’t have cost her anything !!!!!!!!!!! im sorry, im so emotional right now, i have been sick my whole life and never knew why, i feel so much better already   my results from labcorp:   Celiac Ab tTG TIgA w/Rflx Test Current Result and Flag Previous Result and Date Units Reference Interval t-Transglutaminase (tTG) IgA 01 28 High U/mL 0-3 Negative 0 - 3 Weak Positive 4 - 10 Positive >10 Tissue Transglutaminase (tTG) has been identified as the endomysial antigen. Studies have demonstrated that endomysial IgA antibodies have over 99% specificity for gluten sensitive enteropathy. Immunoglobulin A, Qn, Serum 01 245 mg/dL 87-352

      Okay that is really good to know. So with that being positive and the other being high it makes sense she diagnosed her even without the endoscopy. So glad we caught it early. She had so many symptoms though that to me it was clear something was wrong.   yeah I think we had better test us and the other kids as well.
