  1. Jenn, Sorry I didn't address all this in the email I sent you. I'm posting it, just for anyone who might also find it helpful. Then I'll answer your other questions As far as your health situation goes, I say, do what you think is best. If the doctors don't want to help, do what you can do. I had to go to my doctor and request the test for celiac...
  2. Wow this looks delish! Might throw in some almonds and see if it curbs my rocky road craving
  3. Haha, I ran into the same problem last weekend
  4. Yummy recipes! Muddy buddies are still my fave, but I'm gonna try some of these. I keep envisioning some sort of rocky road something or other that I want to make w/ rice chex. I need to check out their website! So, is this just like muddy buddies, except for you crush the chex up and make little clusters? that sounds awesome!
  5. This sounds exactly like me!! Had to cut out dairy, and then I was better for awhile...then started feeling it again. It's so frustrating!
  6. Hm, I've wondered about rice myself. I don't know, I haven't narrowed it down enough, but something's still bothering me. Hope you can get it figured out.
  7. I was dx with IBS, then w/ celiac, then again w/ IBS. So I wouldn't rule it out completely. If the tests show celiac, get on the diet, and see how you feel. I had to cut all dairy out after reintroducing it to my diet. So, "technically" (or at least, according to my GI) I have both. Which to me, it means, I have celiac, plus something else (yet to be determined...
  8. One of the Mexican restaurants around here offers a gluten-free menu. On it are things like tacos w/ soft corn tortillas (my favorite are the halibut tacos), tostadas, fajitas and salads. Always have them check though; this restaurant offers "gluten free beans" since the brand they use regularly has gluten in it.
  9. Eggshells also kill slugs. When I was a kid, we saved our shells all winter and sprinkled them around the perimeter of our garden, then around each plant. Some places (like Oregon) have more of a slug problem than others. I miss having a big garden. I have a very small backyard now. I usually grow lettuce, spinach, tomatoes, squash, herbs, and peas. I...
  10. excellent recipe! i might have to try it (subbing out the dairy though).
  11. I do the same thing with my mixer. I totally burned out my hand mixer on gluten-free bread too
  12. I had a similar situation where I was gluten-free for almost a year before I started getting sick from dairy. Lactaid helped for awhile, but eventually I had to go off dairy completely. My GI says I may have developed an allergy to dairy.
  13. Welcome back! That ham and pea soup sounds really good! I'm gonna have to try that one this weekend
  14. My theory is similar to this. I think that, in addition to what we eat, HOW we eat affects how our food is digested. I notice that on days when I'm late, so I hurry and eat, or when I'm not paying attention to my food and overeat...more often I get sick. Not necessarily gluten-sick, but bloating/gas/cramps nonetheless. I have a problem with popcorn...
  15. Another thing to try when making bread is to not let it rise too long. Many recipes call for rising time up to 45 minutes. The makeup of gluten-free bread is different, so many bakers will tell you that 10-20 minutes is all you need. I never let mine go more than 20. Also, make sure your yeast water is the right temperature. I didn't realize until I bought...
  16. Hm, I wasn't as much a fan of these. They tasted too "grainy/healthy". Might have had a stale box though. They were okay though for tuna and crackers when camping. I didn't much like the nut thins either. Glad you liked them though! I'm more of a Glutino fan
  17. I really like align. Although, I don't know if this is related, but I stopped taking them for 2 months, and my stomach was sick almost every day! It was horrible. I just got back on them again 2 weeks ago, feeling a little more normalized. Don't know if that was the cause, but I definitely feel better when I'm on them.
  18. Yay! Glad you found a good mix for the muffins I like gluten-free Pantry products.
  19. Oooh, I can't wait to try them!!
  20. I think this is probably close to the truth. I get annoyed by my inlaws and family gatherings, but I've learned not to let it bother me (as much...). They all know I'm only going to eat what I feel safe eating, and I'll provide myself with enough to eat. My dad was teasing me last time I was in town. I had made some cookies to put out on the coffee table...
  21. I had the same issue w/ lactaid pills. I think I built up a tolerance to them, and they stopped helping as much over time. I ended up just cutting dairy out of my diet completely.
  22. I use the smart balance spread that darkhorse mentioned on things like toast and veggies. I use the earth balance sticks for baking. Both seem to work great.
  23. There is a difference between the potato starch and flour. Not one you want to mix up either. Can have very gross results Tapioca flour/starch is one and the same though. Good questions though!
  24. Yay! Glad it worked for you! I picked up my easter turkey at the store yesterday and it's at home cookin' all day
  25. good to know still need to give this recipe a whirl!
