Sweetfudge replied to Sweetfudge's topic in Traveling with Celiac Disease
I'm glad I won't have to eat salads I can probably do the burger/hot dog (even though I'm supposed to eat red meat sparingly), but won't be as fun since I can't eat french fries. Can't do Amy's either (dairy and past CC issues). Yes, we'll be staying at the Port Orleans hotel. We have the dining plan. We're just trying to map out where to eat, and which... -

So I know I've already posted about this before, but still feeling a little anxious. I am going to Disney World next month, first time w/ food allergies/intolerances. I've done a lot of research, and have a pretty good idea of what to do (thanks mostly to you all!). I'm making all my reservations on monday, but had a couple questions still. Most of the... -

ARCHIVED What Do You Do When You Receive Cookies And Cakes As Gifts?
Sweetfudge replied to Amyleigh0007's topic in Coping with Celiac Disease
i agree. i'm not the type to make someone feel bad for not remembering my condition, so i simply thank them, and pass the gift along. i remember when i worked at a school, all the staff appreciated anything left in the break room! i'd keep some extra gluten free goodies on hand though, just so i wouldn't feel cheated for having these great treats in front... -

I also am a fan of the Glutino crackers. They're great topped with tuna for an emergency lunch. Wow, all these ideas are making me hungry! I think chocolate covered anything is great! Maybe set out a fondue bowl or small crockpot filled w/ chocolate and various things to dip in it Although I suppose this would be more like a dessert idea...but I'd eat... -
ARCHIVED Anyone With Lactose Intolerance?
Sweetfudge replied to odcdinah's topic in Related Issues & Disorders
Yeah, mine was a lot of bloating and gas. I tried the "dairy-light" diet for awhile, then started taking lactaid pills, but neither worked very well. I just had to cut it out altogether. I've also had contradicting results to the skin scratch test. I say, do an experiment where you don't eat any dairy for a whole week. See how you feel. That's the best test... -

yes, she's the reason i've been looking for it. i am also on an IBS diet, so i've been trying to avoid extra fats/oils, so that's a good idea to use half the oil. i usually sub applesauce for half the oil in a baking recipe. -

My favorite gluten-free cookbook is called "Life Tastes Good Again". It's by a couple of ladies that live in my town, and it rocks! They use Bette Hagman's flour mixes, and every recipe I've tried has turned out great. You can buy it at eatingglutenfree.com, and they also have a lot of their recipes posted there. I also really like Annalise Roberts' "Gluten... -

From Annalise's book, I really liked the Lemon Coconut/Lemon Poppyseed muffins. Have made both variations several times. I also really liked the Chocolate Ricotta Muffins (back when I could eat dairy) - very moist! I made the Cranberry Nut bread the other day, and it was good, but a little too sickly sweet. I would probably half the sugar next time. Flavor...
