Yummy recipes! Muddy buddies are still my fave, but I'm gonna try some of these. I keep envisioning some sort of rocky road something or other that I want to make w/ rice chex. I need to check out their website! So, is this just like muddy buddies, except for you crush the chex up and make little clusters? that sounds awesome! -

I was dx with IBS, then w/ celiac, then again w/ IBS. So I wouldn't rule it out completely. If the tests show celiac, get on the diet, and see how you feel. I had to cut all dairy out after reintroducing it to my diet. So, "technically" (or at least, according to my GI) I have both. Which to me, it means, I have celiac, plus something else (yet to be determined... -
One of the Mexican restaurants around here offers a gluten-free menu. On it are things like tacos w/ soft corn tortillas (my favorite are the halibut tacos), tostadas, fajitas and salads. Always have them check though; this restaurant offers "gluten free beans" since the brand they use regularly has gluten in it.

Eggshells also kill slugs. When I was a kid, we saved our shells all winter and sprinkled them around the perimeter of our garden, then around each plant. I had a similar situation where I was gluten-free for almost a year before I started getting sick from dairy. Lactaid helped for awhile, but eventually I had to go off dairy completely. My GI says I may have developed an allergy to dairy. -

My theory is similar to this. I think that, in addition to what we eat, HOW we eat affects how our food is digested. I notice that on days when I'm late, so I hurry and eat, or when I'm not paying attention to my food and overeat...more often I get sick. Not necessarily gluten-sick, but bloating/gas/cramps nonetheless. I have a problem with popcorn... -

Another thing to try when making bread is to not let it rise too long. Many recipes call for rising time up to 45 minutes. The makeup of gluten-free bread is different, so many bakers will tell you that 10-20 minutes is all you need. I never let mine go more than 20. Hm, I wasn't as much a fan of these. They tasted too "grainy/healthy". Might have had a stale box though. They were okay though for tuna and crackers when camping. I didn't much like the nut thins either. Glad you liked them though! I'm more of a Glutino fan -
I really like align. Although, I don't know if this is related, but I stopped taking them for 2 months, and my stomach was sick almost every day! It was horrible. I just got back on them again 2 weeks ago, feeling a little more normalized. Don't know if that was the cause, but I definitely feel better when I'm on them.

I had the same issue w/ lactaid pills. I think I built up a tolerance to them, and they stopped helping as much over time. I ended up just cutting dairy out of my diet completely. -

I use the smart balance spread that darkhorse mentioned on things like toast and veggies. I use the earth balance sticks for baking. Both seem to work great. -

There is a difference between the potato starch and flour. Not one you want to mix up either. Can have very gross results Tapioca flour/starch is one and the same though. Good questions though! -
