  3. I believe that the cross contamination issue is the most important thing to address when eating out. When a server tells me, "yes the chef says this dish is gluten free", I always remind them to clean the grill, don fresh gloves, use a fresh pan/bowl, etc...   4. I lick envelopes all the time... well 5 or 6 a month (bills), and have never had a reacation. I remember reading somewhere that envelopes USED TO have gluten, but the newer ones do not.   6. I find Blue Diamond Nut thins and Kame rice crackers in the 'regular' section at the grocery store. These are actually my favorite gluten-free crackers. But..... I have read some seem to react to these brands. The ingredients are gluten-free, but there is some question as the the factory cross-contamination issue. I have never had a problem with them...

  8. Quinoa is a great substititue for couscous in tabboulli (sp?). It might satisfy your craving for bulgar, too. It is a very high protien grain. You cook it up just like rice- be sure to rinse it well and make sure there are no hulls, or it will taste a bit bitter. Good Luck, Pam

  13. I believe that the separate utensil and pan issue is a controversial one. I do not have separate pans in my kitchen and have never had a contamination problem. If you clean the dishes very well, there should be no left on gluten on them! I pay special attention to utensils and strainers used for 'real' pasta, being sure there is no residue on them...

  17. My suggestion is YOGA. I have found that yoga has not only strengthened my core muscles and made me a more fit person, but also has helped with stress. Yoga can be very centering and grounding. The relaxation/mediatation aspect is what really makes it wonderful. I would suggest, though, that you find a yoga studio to join instead of just taking classes...
