  1. SOmetimes its the seaweed. Much of the cheaper Korean seaweed is process in soy sauce making it really rotten for us. The only rolls I get -- when the nori (seaweeh is good) are the oshinko ( pickles) and cucumber or natto rolls.
  2. SO true Lisa-- just real food would be nice..

  5. Scott, Maybe you have the full story and I missed it. Our paper didnt have too much to say---- Experts see way to cut wheat gluten [Honolulu Star-Advertiser, 4 December 2012] A team of scientists has concluded that it is possible to develop gluten-free wheat plants, according to a study published in the journal PNAS, the Proceedings of the National...
  6. thanks a bunch Amber -- we haven't decided where we're going next -- I usually have to travel for work so sometimes a vacation is staying at home. take care
  7. I guess it might depend on where you live in Calif. There are so many great healthfood restaurants that all make great gluten free meals. Even the whole foods stores have great restaurant hot and cold foods sections plus a great selection of items in the grocery part. hugh gluten-free sections. One a few blocks form LAX too. i live in hawaii so...

  9. While in the hospital recovering from minor heart surgery, i got to see my chart which has a big celiac stamp on it and a note that i'm vegan not to have any animal protein-- so of course they gave me a tuna sandwich on whole wheat for lunch.
  10. By All means, come back to hawaii -- If you visit the Big Island I'll make sure my chef friends take care of things-- Ohau too for that matter. When i was first Diagnosed almost 8 years ago, none of the chefs here including me knew a thing about celiac -- only peanut or shellfish allergy which was rare then too. Now, 12% of the guests at resort hotels...
  11. My pains are usually in the middle although sometimes hard to tell for sure. Three days is awhile though. I guess it cant hurt to get your heart rhythm checked. good luck
  12. Thanks much, good to know about Swissotel. Our hotels in Hawaii average about 15% of the guests have some special dietary requirement. When I was first diagnosed almost 8 years ago it was less than 1% take care
  13. Doesnt sound like what happens to me . My just pains are not from being glutened but are form other sorts of trama like tripping or some other accident. That causes my heart to go into afib and I can feel it right away when it happens with a popping and gurgling sound followed by all sorts of pain and shortness of breath. Usually takes a day or to go back...
  14. for me it depends on what it is-- Usually I get mine at the vitamin shoppe and not gnc. They seem to be much more celiac aware and even when i had a question they would go into the manufacturers web site and make some calls to make sure things were gluten free. i get a few more common things from Costco. nature made, K-Something are teh brands I usually...

  16. There is a hugh difference in the way your body reacts after being vegan and gluten free. The terms are not interchangeable either. If your not lacking in vitamins now, you might be in a short period of time. make sure you check fairly often. Besides the obvious ones like b,c,d & E i take magnesium, alpha lipohic acid and a few others. I find it...
  17. there are - -been celiac for almost 8 years and vegan for 3 --In my case I had some heart trouble that some docs think was caused indirectly by not getting the right combinations of nutrients that strengthen blood vessels which were damaged by crystalline structure of animal protein molecules. I feel so much better and so much more healthy the past few years...
  18. sounds like it could be a issue with the nori too. so much of it is processed with soy sauce. Try some straight fish, even try using lox as a sushi. main thing is to practice to get the rice the way you like it. It gets easier form there.
  19. GUess i'm spoiled by so many years in Japan and using real products. if you have the name of the gluten rice vinegar, please let me know. take care ken
  20. I'm gluten-free and Vegan, Have this problem sometimes but only in large groups otherwise i just order plain steamed veggies and tofu at Chinese or Thai places. Shiracha and ma ploy are no problems for me to use but hot sauce isnt for everyone. I do carry a small spray bottle of braggs aminos to use or even by a bottle of soy sauce and leave it at the...
  21. I usually just go to the WHole FOods on Maui or I ask Merrimans, ahead of time, to make something. There is another place in Makawao and one in Haiku too. I'm in Kona but get there a few times a year.
  22. sounds like other problems at that place too-- no real sushi is made with barley malt vinegar. The rice vinegars and mirin's should all be safe. I think of myself as being very sensitive and never had problem from vinegars as long as its not malt barley. Might be worth trying to make your own. Im just getting home after a month but could try to post...
  23. Good to know, I usually dont ask since I'm usually eating at friends restaurants. I trained as a chef here and have a lot of buddies with small places spread around Tokyo. I found this menu at one of the local CHinese places-- forget the name but it could be a chain. In La Qua in Bunkyo Ku.
  24. Where one really has to be careful, besides the sauces, is the nori-- the seeweed wrap. "Real" japanese restaurants usually use real Japanese nori which is just dried seaweed. Many wannbe restaurants and those trying to be fancy, as well generic "Asian" restaurants often use Korean and Chinese nori which is often processed with shoyu - -soy sauce....
