At good highend soba shops you can ask for juwari soba which is the 100% buckwheat. It also tastes much better. River I also have no problem with gins or shochu, a Japanese alcohol often distilled from Barley. I also consider myself very sensitive and cannot walk in to bakeries or breath around fresh baked goods. Peter I can tell you about sake and shochu but not much about gin. Although I dont have problems with vinegar, it seems to be more and more common with visitors to Hawaii. There is some calif produce in Japan but very little. We cannot get close to their quality with the scale our companies want to produce. Calif. picks things way to early and ripens it artificially. Really depends where you shop but its not as bad as the media portrays. Meat is considerably higher though. Then again boneless skinless chicken breast is cheaper than legs and thighs. Fruit is higher but its worth the difference to have a ripe good tasting peach than the rocks sold at most markets here. Overall the quality is much better in Japan for... -

Used to be at Merrimans or Roys I would call the day before or first thing in the AM unless my son was working. Since I know most of the chefs they usually come up with something when I just show up. Some places from time to time have the gluten free, sugar free DaVinchi syrups. Usually blueberry and raspberry. Dont know of specific shops other than the stand in front of the Kaiser hospital. The WHole FOods in Kahala Mall has an extensive gluten-free section. Ken
