  1. Yeah I'll have to see this at some point --hopefully someone will have recorded it. So they wouldnt let Roy use soy sauce -- honestly thats a good thing -- he should know to use Braggs aminos as a replacement. Mrs Bragg has a farm about 10 miles from here too. My son was working for Roy then got hired away to the Mauna Kea Hotel. He wants to work hourly...
  2. Thanks for the report -- almost makes me wish I had TV. When I was on Season 2, I mentioned celiac 3 or 4 times but they cut everything from the final. Now, If you can egt the current copy of the American Culinary Review, the official ACF magazine, there is a good story on going gluten free and what it means for professional chefs who provide this. It...
  3. At good highend soba shops you can ask for juwari soba which is the 100% buckwheat. It also tastes much better. At some of the shops you can get sobagaki which are soba dumplings of a sort and really great. As you mentioned, its important to check rice noodles and rice crackers to make sure its all rice. Much of those are ot -- You also have...
  4. Sounds like a great excuse to go back and visit. I was born on 51st & woodlawn and grew up on 53rd street working in kimbark plaza for 9 years and for the Hyde Park Herald . That was back in the 60s though. Last I heard my brother in law was still working for the coop there. Ken
  5. River I also have no problem with gins or shochu, a Japanese alcohol often distilled from Barley. I also consider myself very sensitive and cannot walk in to bakeries or breath around fresh baked goods. Peter I can tell you about sake and shochu but not much about gin. Are all made essentially the same way? Ken
  6. I've given up buying nori in Hawaii, its all from Korea and processed with soy sauce. Not being in Japan for a year must be like going through withdrawl!
  7. Its amazing how much mayo is used in Japan. http://www.(Company Name Removed - They Spammed This Forum and are Banned)/Uwajimaya-Kewpie-May...z/dp/B00023T3IA --------------------------- from wiki-- Japanese mayonnaise. Japanese mayonnaise is typically made with apple cider vinegar or rice vinegar and a small amount of MSG, which gives it a different...
  8. And a Hau'oli la hanau from Hawaii! Thanks for all you do for us! Ken
  9. Bonefish in the suburbs (skokie, glenview) has a great gluten-free menu too
  10. Amen! & never again!
  11. Although I dont have problems with vinegar, it seems to be more and more common with visitors to Hawaii. Since I work with a lot of hotel chefs, we've come up with some vinegar substitutes based on sour fruit like bilimbi and green starfruit juice as well as a number of others. Some of us think that it might be the acid as well as or instead of sulfites...
  12. Great, Hope you can make it to the farmers market on Saturday-- @ keauhou shopping center from 8 to noon Have fun!!!
  13. We do the farmers market every Saturday ( when i'm home) Have done it for about 10 years. I started on here in Kona almost 15 years ago. My wife does gluten free fruit breads. In Hawaii there are a number of restrictions that dont always apply at farmers markets but do with you try to sell in a store. The use of a certified kitchen being one. You can...
  14. Hi Beth, Glad Doc Steve worked out so well. He's a good guy who really bailed me out 16 or 17 years ago and we've been buddies since. In the early 80's cars would pull up beside me to ask if I wanted a job teaching English. I never did it but had a bunch of friends who did. We always tried to support this though the old compuserve Japan forum which...
  15. I'm lucky I can grow my own! You'll love the gardens in tiny places in Japan and along the streets in old styrofoam boxes.
  16. There is some calif produce in Japan but very little. We cannot get close to their quality with the scale our companies want to produce. Calif. picks things way to early and ripens it artificially. Kids today have no idea what peaches, plums and other fruit taste like unless they live where it grows and often get it off the tree. Most Americans have never...
  17. I'll second that! and thank the new quitters too!
  18. hope your all doing well I haven't slipped up yet but really wanted to light up today. No stress, nothing special happened -- just missing it still. I guess this is what addiction is. good luck all!
  19. Thanks -- Being hit with bad diabetes a few months ago I've ben skipping over everything. This is not the way I wanted to loose weight! ken
  20. Thanks daphniela We have so many of their products here in Kona but nothing that is gluten-free so I had guessed they didnt make it. Funny since the stores carry so many other gluten-free items. Ken
  21. If I told someone I would pay $50.00 for grapes they think i'm nuts -- until they try one of those Kyoho! It is amazing the difference in price for the same items. $100. for a melon in Seibu or $6.oo for the same thing at a train station of Family Mart.. MM -- your making me homesick!
  22. Thanks, It is pretty cool -- In cooking school in Japan we had to duplicate a meal served the Emperor in 1923 -- He's lucky they dont have to do that now!
  23. Really depends where you shop but its not as bad as the media portrays. Meat is considerably higher though. Then again boneless skinless chicken breast is cheaper than legs and thighs. Fruit is higher but its worth the difference to have a ripe good tasting peach than the rocks sold at most markets here. Overall the quality is much better in Japan for...
  24. Used to be at Merrimans or Roys I would call the day before or first thing in the AM unless my son was working. Since I know most of the chefs they usually come up with something when I just show up. They are prepared better than they were. The Four-Seasons and Hilton have gluten-free areas and pantry now. My son is now at the Mauna Kea Hotel Manta Ray...
  25. Some places from time to time have the gluten free, sugar free DaVinchi syrups. Usually blueberry and raspberry. Dont know of specific shops other than the stand in front of the Kaiser hospital. The WHole FOods in Kahala Mall has an extensive gluten-free section. Ken
