ARCHIVED Restaurant Research In New York
kenlove replied to parifete's topic in Gluten-Free Restaurants
Here you go! 1. When you eat out at a restaurant do you worry about cross contamination? Yes, very much so. Having been a chef and now working with other chefs and teaching at a culinary school, know what goes on in the kitchen. There are too many chances for CC unless the kitchen staff is really aware. 2. How has being diagnosed with celiac or gluten... -

Having driven a yellow for all of 2 months in Chicago 35 years ago, I can offer your husband sympathy. I still have my cap -- somewhere... Margy is a full time sub and rotates between pre-school and 5th grade, where ever she's needed. She's had 3rd grade all year though and is ready to change. I better get out of here and start meeting day. take care -
ARCHIVED Can U A Bone Marrow Donor?
kenlove replied to Candy's topic in Introduce Yourself / Share Stuff
I know nothing about it but the last time I asked they were treating me for a number of other things before they found it was celiac. I might have been told no for other reasons than celiac but I was curious since I used to be a donor. -

Thanks Deb, It's funny about us and vegas. Never had a desire to go though but somehow it keeps being intwined in out destiny. We were going to Calgary rodeo when my then girlfriend (now wife of 32 years) won a radio contest and 2 tickets. Since then she's won 2 other trips there. Neither of us are gamblers so that wasnt a draw but there is a lot... -

I can remember being there in July once and showing someone what happens when you open a loaf of bread in 115 degree Vegas weather. Turned into mini square frisbees instantly. I can also remember being there when there were snow flurries. I was stopped for driving in it but showed them an Illinois drivers license. IT was pretty funny. I research and promote... -

We'll be going to the other Venetian place for a few days in July but that was also on the top of the list. The Belagio as well although I dont know why. Not too worried about foods in Italy since I'l be research figs and citrus there and can survive on those and coffee. My wife Margy is really excited as she's never been to Europe before. Like your... -

We're talking about next year since I have to work in Italy for 6 weeks this summer (she gets to come too). Yeah I know its a tough job but someone has to do it. IT has been a number of years and we've never seen the "new" hotels. Hard to decide where to stay. My step father sold the light fixtures to the Tropicana and Caesars back in the 60s.... -

ARCHIVED Vinegar Substitutes
kenlove replied to tennisnut's topic in Gluten-Free Recipes & Cooking Tips
Yumm! made something like it last night for fresh artichoke hearts and chopped figs but used yuzu peel powder instead of the mustard. One of the farmers at a high elevation here started growing artichokes which I cant grow in my area. The difference in fresh ones and the stuff shipped in is amazing! take care -

COuld just be something they baste on the chicken that has soy sauce in it. Might be good to ask the chef or manager to help track it down if you want to eat there again. We also seem to have to be detectives if we want to eat someplace. good luck -
ARCHIVED Vinegar Substitutes
kenlove replied to tennisnut's topic in Gluten-Free Recipes & Cooking Tips
We use a number of different tropical fruits as vinegar substitutes here. Bilimbi is a sour relative of starfruit which when juiced is a great nutritious substitute. You can also use green starfruit. Calamonsie lime is a good one too. These can be found in Philippine groceries since they are the basis for many dishes there. Try acerola sometime too. Ken -

Right, thats another one! Some restaurants use instant potatoes too. We get what we pay for. I would much rather eat at home for a month and save enough to splurge on a real gourmet dinner. Than again, I'm spoiled by working with chefs all the time. Ken -

Hi Bea, thanks. Have never heard of Peptizyde but I hope it helps you if you try it. I think you r right that it will only get easier for us in the future in terms of eating out etc. There are a few paces here I would never go too now but thats their loss. I would like to see this really catch on and at least my island become known as celiac friendly... -

That whole salad thing is a pain sometimes. I usually scare the waitress that I'll keel over and die on the floor if they simple remove the croutons. <G> .. A few years ago a radio station tried to get the state to open a LV casino but it never got anywhere. There are no horse races, lottery or any legalized gambling here. Only illegal chicken... -

Besides the MSG Ursa mentioned, restaurants will use flour in butter sometimes. Also if your at a breakfast buffet never get scrambled eggs since they sometimes thicken those too. Then I guess by your name you dont eat eggs anyway. It could also be the CC from the pan or grill. Same tongs used for your chicken that are used for one basted in soy sauce... -

Some folks here keep saying they should open a Hawaii theme Hotel/Casino there with profits going back to the state. Doubt it will ever happen though. Originally from Chicago and used to commute to Japan monthly-- Going from here was a lot easier. Been around close to 30 years here. To bad about the CC where you went. I'm friends with a lot of well... -

Some of us call Vegas East Hawaii since its the place of choice for most Hawaiians to get away too. We were married at the Sands 32 years ago. We have a chefs meeting each month at a different location. One of the web designers here is also celiac so I invited him so that the 50 chefs could see how we went through a buffet line and hear the questions we... -

I was quite the opposite and still am. Guess I'm kind of evangelical about having celiac. Should have a button to wear celiac and proud. <G> Since I work with a lot of chefs and lecture at the culinary school here i've taken on trying to educate Hawaii about it. It can only go uphill since there were so few of us here as residents but the hotel chefs... -

Was diagnosed at 54 and will be 2 years totally gluten free June . There are so many chances for cross contamination and other things that affect us that I'm not sure if I heal slower or its some new problem. Took them 6 months and 3 hospital stays and like Dave I lost more than 50 lbs. during that time. Just wish I had not put back 65 after I went gluten...
