ARCHIVED Corn Dog Coating Mixnikki8 replied to jmd3's topic in Gluten-Free Foods, Products, Shopping & Medications glutenfreeda.com has a recipe for corn dogs in their online cooking class section. It has pictures to show you step by step how to do it. I haven't tried it yet, but printed it off and will do it soon. It even gives instructions for freezing them and reheating in oven.

I can't help you trouble shoot the bread making as I have the same problems. I was wondering if your son has tried Kinnicknick Frozen Sandwich bread. I have a 3 yr old also and he really likes that. I toast it until it is the right texture. I don't know if that helps, but I thought I'd throw that out there.

ARCHIVED Special Baking Pan Recommendationsnikki8 posted a topic in Gluten-Free Recipes & Cooking Tips I was wondering where I can find the following pans: doughnut pan hamburger bun pan french bread pan? I went to Bed, Bath and Beyond and had no luck. I have also not seen these pans at superstores. I have not tried department stores. I have looked on a few websites, but can't find them all in one place. So website or store recommendations would be...

ARCHIVED Seven Things You Love About Celiac Diseasenikki8 replied to pedro's topic in Coping with Celiac Disease I know I can think of seven, but am short on time so I'm going to post the one that keeps me sane: ****Whatever has gluten in it really isn't that good for you anyway.**** I'm trying to lose a little weight. Everytime I face a tempting food that has gluten, I think "well, that isn't healthy anyway. Good thing I can't have it." Nikki

I know this has been asked before, but I can't find it. How long do the effects of being "glutened" last? I am not very sensative to cross-contamination. But I know for sure that I got gluten on Tuesday. Days later, I still feel nauseus and gassy and have no appetite. However, my little one vomited the other day and had no appetite for a few days,...

ARCHIVED Input On Onset?nikki8 posted a topic in Post Diagnosis, Recovery & Treatment of Celiac Disease I was diagnosed in Nov. 06. I had symptoms after I had my second child in April of 06. I don't think I had symptoms before so I thought this was triggered by pregnancy. But I've been thinking about this a while now. I'm wondering, is it possible that the symptoms were triggered by pregnancy, but that I've always had it? I was severly anemic at 3 years...

ARCHIVED 10 Mos. Old-possibly Celciac?nikki8 replied to nikki8's topic in Parents, Friends and Loved Ones of Celiacs Thanks to the last few posts for your supportive ideas. I was pretty turned off to this forum by an earlier post when I was criticized for giving my baby snack foods and the suggestions that that was the reason he was having problems. When you are so scared and seeing your baby consistently lose weight and not thriving, the last thing you need is to be...

ARCHIVED Kinnickinick Kwick Bread And Bun Mixnikki8 posted a topic in Gluten-Free Recipes & Cooking Tips Can you make this mix in a bread machine? I called the company and they said they don't reccommend it, but that some people have done it by adding water to the mix. She said it is too thick for a machine but water will make it possible. I was wondering if anyone has done this and if so, how much water to add. Thanks, Nikki

ARCHIVED Glutino Honey Nut Cereal?nikki8 posted a topic in Gluten-Free Foods, Products, Shopping & Medications Hi, just wondering if anyone has tried Glutino's Honey Nut Cereal. Is it any good? Or is it like those awful PerkyO's? I don't want to waste money like I did on that cereal. Thanks.

ARCHIVED Kinnikinnick White Sandwich Breadnikki8 replied to Guhlia's topic in Gluten-Free Foods, Products, Shopping & Medications We just bought the frozen Kinnikinnick white bread and my son liked it. I was wondering if you are talking about the frozen one or the bread mix. I haven't tried the bread mix yet and was wondering what people thought of the mix? Nikki

ARCHIVED Gluten-free Yellow Birthday Cake Recipe?nikki8 replied to emi-220's topic in Gluten-Free Recipes & Cooking Tips This thread is perfect for me too as I just made yellow cupcakes for this weekend for a birthday party we were going to. I used Annalise Robert's recipe. It tasted good, but was very crumbly. We couldn't even put frosting on them. Any ideas why this could be? Nikki

ARCHIVED The Most Delicious Home-made Gluten Free Bread I've Ever Tasted...nikki8 replied to mamatide's topic in Gluten-Free Recipes & Cooking Tips I made this bread this week in my Zoji x20. It was just as great as people say. We love the texture. But it either didn't rise as much as I thought it should or it fell. I set the rise at 55 minutes as someone suggested and I used milk. Should I increase the rise time? Any suggestions?

ARCHIVED 10 Mos. Old-possibly Celciac?nikki8 posted a topic in Parents, Friends and Loved Ones of Celiacs Hi, I'm going to try to make a long story short. I was diagnosed in Nov. and my 2 1/2 year old son was diagnosed in early January. My second baby was a chubby little boy until I had my biopsy in Oct. and was away from him for 4 days. My breastmilk supply went down and then he's had ear infections and other things occur. He started losing weight. In...

ARCHIVED Annalise Robert's Bread Recipes?nikki8 posted a topic in Gluten-Free Recipes & Cooking Tips I'm getting a breadmaker this week-a Zojirushi (or however you spell it) and am trying to figure out which bread recipe I should try first. Has anyone had good luck with Robert's bread recipes in a machine? If so, any hints? Thanks.

Thank you all so much for the suggestions. I'm so excited to go to a Whole Foods and try some products from their bakery. gadgetgirl, I'll be in Worth, which is a southwest suburb near Chicago Ridge. Are you familiar with where that is? Nikki

I'm going to the Chicago area in a few days to visit family and will be there for 10 days. Can anyone recommend some good stores where I can get gluten-free supplies? I know where I can find a Trader Joe's, but was wondering if there is anything else that would be good to visit. thanks, Nikki

ARCHIVED Lipton Onion Soup Mix?nikki8 posted a topic in Gluten-Free Foods, Products, Shopping & Medications I don't see any ingredients that are suspect. Is this gluten-free? The Walmart equivalent is not, so that's why I wanted to make sure. Thanks, Nikki

ARCHIVED Hair Loss Part Of Celiac Disease?nikki8 replied to BeckyW's topic in Coping with Celiac Disease I just saw my doctor this week and I asked him about this very issue. He explained the process the hair shaft goes through (which I didn't really understand) and said that stress or a major change in diet can cause several hair shafts to shed at once. It's called Teleflovanuvia or something like that. I'm not explaining this well at all, but what he told...

ARCHIVED Barbara's Puffin Cereal?nikki8 posted a topic in Gluten-Free Foods, Products, Shopping & Medications I got this cereal today and it is so good. But I realized that it has oat flour in it. Do I need to avoid this product?

I have Pampered Chef's microwave rice cooker and I love it. It cooks white rice perfectly. I haven't tried brown rice in it, but I'm planning on trying it this week.

I tried to make my cream puff squares recipe substituting a pre-mixed gluten-free flour mix. It's in the oven right now and I don't think it's going to turn out. Does anyone have a recipe for puff pastry or a suggestion on which flours to use? I think Bette Hagman has a puff pastry recipe in her "More.." book, but I only have her first volume. Does anyone...

ARCHIVED Authentic Foods Muti-blend Flour Mixnikki8 posted a topic in Gluten-Free Recipes & Cooking Tips Can anyone give me an opinion about this product? I bought a bag of it because it says you can substitute it cup for cup for wheat flour in any recipe (except to add xantham gum in certain recipes). I'm wondering how well that works. I would like to try regular, "mainstream" recipes using gluten-free flour. I just got The Best Light Recipe book by America...

Does anyone have suggestions for the Rib Crib? We are doing take out from there this weekend for hubby's birthday. I called and talked to the manager. He read me the ingredients for their rub on the meat and it sounded gluten-free, but I wanted to get some opinions/experiences. Thanks, Nikki
