  1. Hi, all. I've recently started buying my meats from U.S. Wellness after re-confirming that they're gluten-free but have been left with one problem. U.S. Wellness sells beef, pork, chicken, etc but doesn't seem to carry any veal. Does anyone know anyplace on the web that carries gluten-free veal? I'm part italian and have been missing my veal parm :D Thanks :D

Veal is meat from baby cows. Beef.

  3. Posted on listserv this morning. The owner of Baby Cakes (gluten free bakery in NYC) will be on making gluten free brownies tomorrow.

    Awesome!! Thanks for posting!

Just looked and here is the "blurb" about tomorrow's show.

  4. I think that if members put 1/2 as much time into REAL threads as they do into gab/chat threads we would really see a difference in the board. Much of our time is spent gabbing and not spent really helping people.

The gab/chat threads also create that clique feeling that Susan had brought up in a previous thread.

    Just my 2 cents :D

  5. The jelly doughnut recipe intrigues me :D

    -Jessica

Yep, I love making donuts! The recipe I use (and photos) can be found here:

    Open Original Shared Link

    Amazing Gluten-Free Buttermilk Donuts

    2 eggs, beaten

    2 cups buttermilk

    1/4 cup butter, melted

5 cups gluten-free rice flour mix (see note)

    1 cup sugar

    1 teaspoon nutmeg

    1/2 teaspoon cinnamon

    2 teaspoons baking soda

    1 teaspoon baking powder

    2 teaspoons salt

    2 teaspoons xanthan gum

1/2 cup sugar, set aside in a bowl

    # Combine dry ingredients in a separate bowl. Fold slowly into the wet ingredients, mixing by hand with a wooden spoon. When the ingredients are mostly combined, use your hands to knead a few times to make sure the ingredients are fully incorporated.

    # Let the dough rest for 15 minutes. Sprinkle extra rice flour mix on your countertop or a large cutting board. Roll out dough to between 1/3 and 1/2 inch thick. If dough is sticky, work in more rice flour blend.

    # Heat 2-3 inches of canola oil in the bottom of a pot until very hot (375 degrees F).

    # Cut dough with doughnut cutter OR use a glass, biscuit cutter or jar with approximately 3-inch diameter to cut disks out of the dough and use the cap of the oil bottle to cut out the center hole.

    # Remaining dough scraps can be rolled into balls ("donut holes") and fried.

    # Carefully drop each doughnut in hot oil with fingers, being cautious not to splash oil. Cook until golden brown on both sides (just a few minutes). You will need to cook just a few at a time, but the cooking doesn't take long at all so this goes quickly.

    # Remove donuts from oil with a slotted spoon or spatula, and place on a plate lined with two layers of paper towel or brown paper to absorb oil. While still warm, roll each donut in the bowl of sugar to coat fully. Alternately, you may omit this step and apply a glaze at this time.

    # Serve while warm.

There is also a jelly donut recipe here: Open Original Shared Link

  6. This past Saturday my family and I went to Dolly Parton's Dixie Stampede Dinner Show in Orlando, and of course being the only Celiac in my family I was very nervous about going and being able to eat safely. So of course we called ahead and they assured my they would provide a gluten free meal.

So when we got there, they guy checking us in even said okay, don't eat the soup, the biscuit or the dessert everything else is gluten free. The show was wonderful and the food tasted great, but within 30 minutes of eating it I was in excruciating pain, and needing to rush to the nearest bathroom.

So here is my question should I send them a little e-mail stating that they need to be very careful when they tell a customer that something is gluten free without actually knowing? I know for a fact it was gluten because I never get that pain from anything else but gluten. I just want to make them aware, what do you think?

I would definately let them know that you didn't recieve a gluten free meal. It will help them to better prepare in the future (for others and for you if you wish to return).

Do it in a polite manner. Maybe even call so that you are actually getting to talk to someone. Make a list of things you want to get said before you call though.

Don't let it pass by, or they will think they did a great job, do the same thing for the next poor soul and make them sick as well.

Good luck with it, and let us know how it goes!

    -Jessica

  7. Yup, this is the recipe in my avatar. At least for today anyway. Nope, I don't seperate the eggs. I beat them with a hand mixer for a few minutes until they're almost frothy. They turn out phenomenally. I just added sweetened blueberries and whipped cream to the top.

Funny, with as nasty as I feel with this pregnancy and as little as I've been able to eat, I may end up fattening myself up yet. These waffles are definitely craving worthy. If anyone else tries them, let us know what you think. I'm addicted. I'm going to try them with cinnamon apples also. Yum!

You need to start a gluten free IHOP (International House of Pancakes) Your avatar looks like the waffles they are always advertising on their commercials mmmmmmm

Rootie Fresh and Fruity breakfast.......let me know when you open :P

    -Jessica

  8. I've got one -

You go gluten-free, and suddenly the pile of unread magazines in your bathroom starts getting out of control, and you seriously consider cutting back on subscriptions.

 Nice one.........so true though.....just can't seem to find the time to read anymore.....where in the world did I USED to do all that reading? LOL BATHROOM :P

    -Jessica

  9. i am very disappointed i ws sure they would be pos, sigh they said they were neg

i was soo disappointed that i didnt even ask any thing else, i just called back to ask

for the actual test ran and tehir actual numbers so i am now waiting a call back for that info

so how many of your kids blood work came back normal and they were still found to be celiac

Just curious how young your little one is (can't remember from your other posts)? Keep in mind that results in young children are often skewed. Don't rule out the posability that they DO have celiac or another food intollerance just because of the results. There are always false negatives, especially in young children.

    -Jessica

  10. I'm new to going gluten-free and this board. So perhaps you all know this already.

But last night I tried a gluten-free pasta by Bionaturae that was great. I had tried the Tinyada pasta people seem to like so much, but it seemed too mushy for me. (Or perhaps my husband overcooked it  )

Anyway, the Bionaturae stuff cooked up to al dente very nicely (by my hubby again) and I didn't feel deprived at all.

I found this at Whole Foods.

Isn't it great to have a "normal" meal with your family?!?! Congrats on finding a pasta that you like. I tried several before deciding on Tinkyada for my favorite :)

I had pasta last night too........fettuchini alfredo with chicken MMMM

    -Jessica

  11. I felt ignored for the first few months of joining, but I was in a really terrible place in those first months. Before I ever posted here, I read for days, and finally chose to write to just one popular and prominent member. I got one very polite response back, but no other interaction, ever again (you know who you are), and felt very excluded from what seemed like very close and cliquish behavior. [and now I am guilty of same  - although I try and keep contact with any newbies who write to me.]

Very insightful Susan.........Very insightful. Smart Smart lady :)

  12. If you review the thread there is NOTHING in her presentation to indicate the she felt she was better than anyone else or that what she was saying was the undeniable truth.

She was simply relaying information that she had heard.....as soooo many others have in the past.

Nothing was stated as FACT....until post #8....when things went into a different direction.

I can tell you that if I had these types of posts directed at me....whether it was my first week here...or my second year here....I would not wish to remain on this board.

So far in the past few days she has been accussed of being a troll, a fraud, seeking financial gain, promoting her Dr....and now she is attacked for posting information which nobody can even prove to be false.

And even still....she is now someone who is throwing a temper tantrum because people disagreed with her???

I think shes very justified in her response.....given all that shes dealt with trying to be a part of this board the past few days. If anyone is having a problem with open-mindedness....its certainly not Srokie.

    Rachel-

Now that you are personally blaming ME for the direction of this thread (post # 8). I feel the need to point out to you and your fellow finger pointers that all I did was ask her to check her facts and cleared up mis information. It had nothing to do with any other thread she has going on this board. She posted numerous facts that are untrue. As a moderator of this board, I believe it is my duty to try to keep information on this board true. If it isn't true, then what is the point of the board. To spout off incorrect info and make people sick with it? I would hope not!

I didn't ask her in a mean way, asked her point blank to check facts before posting. Don't post hereseay info.

I stand by my post that we must have correct information on this board. I would say that to any person whom I believed to be posting mis information.

    -Jessica

  13. I was told by that celiac friend of mine that it was Charmin and Bounty, and when I asked for clarification, she said it's anything made by Kimberly-Clark. She is extremely sensitive and wouldn't tell me something like that unless she was having a reaction to it.

Just another valid point of heresay isn't the way to go. Please do your research before posting information. Charmin and bounty aren't even made by Kimberly Clark. The things that you have posted thus far are not true. Planters and Crystal light are Kraft companies. They list gluten containing ingredients on the labels.

Do you happen to have the name of this newsletter that your friend with celiac gets? I'd be interested in seeing the information for myself. I'm sure others would be interested as well.

I am just trying to say, please be careful with what you are posting. Please do not post heresay info and grapevine info. Do the research yourself and then you are sure and you aren't putting others at risk for incorrect information.

It is desperately important that we have correct information on the board. Thank you.

    -Jessica

  14. I have the Cream Hill Estates (Lara's rolled oats) and Mcanns Irish oats are okay, no ill effects and I am highly sensitive. I do not recommend eating a whole wad at first or you and the bathroom will becom engaged to each other, because of the high fibre in the oats. They are definitely not cheap but I can have my oats again and all is good.

The whole oats debate aside, McCann's oats were found to be contaminated some time ago (with a study done by Gluten Free Living Magazine)

Even on their website they say that they do not guarantee them to be free of contamination:

Are McCann's Oat products gluten free?

    All McCann

  15. Ok.......here we go. First Matter of busisness. Please do not post information that you are not clearly sure of. Hearsay and grapevine info just doesn't cut it. Please do the research and find out for yourself before posting 100% sure that products are not gluten free. It creates mass chaos and tons of "clean up duty" for folks. I advise writing the companies first and then posting the information that you recieve from them along with a date of recieving the info. I'm not trying to be harsh here. It is just SO important that we all get correct information. What I have seen posted here is just not correct and will take some clean up duty to fix.

In reguards to planters nuts....they do NOT dust their nuts with flour. Can you imagine now nasty that would taste if they did? Have you ever tasted raw flour? Gross! :P It just isn't true.

Crystal light is made by Kraft. Kraft clearly lists any gluten containing ingredients on the labels. If you don't see (wheat flour) listed then it's just not in there. Again I go back to , can you imagine what it would taste like with raw flour in the drink mix? GROSS!

Charmin toilet paper is not made by Kimberly Clark. Bounty paper towels are also not one of their products.

I am also going to guess that Kinberly Clark does not add flour to their toilet paper. Just a guess here. Please feel free to write the company and post here as to what they say. I can't imagine what a mess it would make "down there" if they did add flour to their toilet paper. When you mix flour and water it makes a gross paste......I don't think they want folks having a gross paste "down there". Just my 2 cents.

I hope that helps to de-bunk some of the rumors started with this thread. Make sure that we are actually writing to the companies to find out information and not just posting heresay info. We all know how critical it is that information is correct.

    Thanks!

    -Jessica

I don't know if this topic has been addressed or not yet, since it's not "new research" (and it's not from Dr. Saviano, haha) - I got this information from a celiac at my college, who got it from a celiac newsletter or magazine.. or something...

Anyway, any toilet paper and paper towels made by Kimberly-Clark are dusted with flour to make them more absorbent. (I don't know if it extends to tissues or not, but I'm guessing it does.)

This includes Charmin, Bounty, Cottonelle... can't think of any more off the top of my head.

I use Brawn paper towels and Angel Soft or Quilted Northern, which are made by Georgia Pacific.

    **********

SIMILARLY: Planter's dusts their nuts with flour to cut down on the oil. Again sorry if this is old info. They don't put it on the label and are paying a fine - they have been given a time limit.

Crystal Light adds flour to their powdered drink mixes to keep them from caking up. They also do not put this on the label but I can't remember if they're paying a fine, or what the story behind it is.

(Got this info from Dr. Saviano).

  16. Seeing as we are in the middle of a huge winter ice/snow storm this weekend. I have my wild idea to make doughnuts. I want a recipe that you don't have to have a doughnut maker to use. There is one here on the site for doughnut holes......has anybody tried it?

Quick and Easy Donut Holes (Gluten-Free)

    Ingredients:

    1 egg
