ARCHIVED 2Nd Opinion Of My Tests
vbecton replied to Smarts's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
You seem textbook Celiac to me! I was much like you, in that I wanted a confirmation of Celiac. I wanted to make sure I wasn't crazy or at least, I could blame it on Celiac if I was . I had scalloping on my endoscopy and the lab report says "no signs of Celiac." But, that was from the lab, my doctor disagreed and diagnosed me based on this and... -
ARCHIVED Caffeine?
vbecton replied to Lori2's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I agree w/ Skylark. Caffeine isn't an issue unless it's messing with your GI tract, or if you have any blood sugar problems. I switched to all herbal teas several years ago, but if I could tolerate caffeine, I would definitely drink it up!! -
ARCHIVED "But You Can Eat Whole Wheat, Right?"
vbecton replied to earthtoneNJ's topic in Coping with Celiac Disease
This was hilarious! I live in a small Texas town (and luckily not too far from a big city) and this is how people talk here. In the few instances that I've had to refuse food and briefly explain why I can't eat it, they always respond with, *insert texas twang* "well bless your heart sweetie, you must be so miserable without dumplins' and biscuits. come... -
ARCHIVED "But You Can Eat Whole Wheat, Right?"
vbecton replied to earthtoneNJ's topic in Coping with Celiac Disease
I've had a few folks recently tell me that "a little wheat won't kill you." So, I've politely offered to eat the wheat, but ONLY if they would politely spend the night with me and read me stories while I spend an entire evening on the toilet with "D." While it may not kill me, they will most certainly want to die after an evening spent with me trying to... -

We definitely have toddlers to be able to relate to Yo Gabba Gabba! I'm going to tell my 2yr old that cupcakes give mommmy a party in her tummy -

ARCHIVED That Cupcake Just Fell Right Down My Throat!
vbecton replied to vbecton's topic in Coping with Celiac Disease
Good point! I did cook 2 minutes less than it said. It said to bake for 18-22 minutes for cupcakes and I baked for 16 minutes and they were totally done! -
ARCHIVED That Cupcake Just Fell Right Down My Throat!
vbecton replied to vbecton's topic in Coping with Celiac Disease
Oh yes she does! I bought the yellow cake mix and used chocolate frosting. I found this by total accident at the crappiest grocery store in our town. I didn't expect to find one thing gluten-free, so boy was I excited to see these! And, my son says they are the best yet! -
You aren't alone. My kids (2) are gluten sensitive and we are awaiting the test results for my son. But, I think it's actually better to have both on the same diet than to have one who can stray. I'm certainly not suggesting I'm glad they both have Celiac, but I'm saying that it's better that everyone join the gluten-free eating! At the moment,...

ARCHIVED That Cupcake Just Fell Right Down My Throat!
vbecton posted a topic in Coping with Celiac Disease
As some of you know, my GI symptoms are crazy. So, what's the solution to an upset and uncooperative GI tract? gluten-free Cupcakes! I had no intention of eating one. I really didn't. But, my son is leaving tomorrow for a camp designed for rising skateboarders who are going to the next level (YEAH!!!) and I knew he needed a pick-me-up for his day... -
ARCHIVED Diagnosis = Refractory Sprue
vbecton replied to yogamommytrainer99's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I'm awaiting my doctor's findings about Refractory Celiac as well. I go in next week. My blood tests are all negative, but my symptoms are worsening by the day despite eliminating everything from my diet (gluten, dairy, soy, corn, caffeine, coconut, legumes, nightshades). My GI symptoms are through the roof and I'm 3 months into this diet. I saw marked... -
Yikes about the gallbladder! Sometimes doctors don't sense the urgency in matters. That's frustrating! I hope you get some relief with that. I'm going into my GI next week for a boatload of test results, one of which is refractory. Not sure that is my issue, but maybe just an issue with digestion. I will talk to him about RX enzymes because I may...

ARCHIVED Homemade Mayo Recipe
vbecton replied to vbecton's topic in Gluten-Free Recipes & Cooking Tips
Interesting about the name change on Hellman's. We just bought a jar of the Spectrum and were surprised that our canola variety had soy and gluten traces. The company was reluctant to tell me about the gluten traces, but I squeezed it out of her. I really like most of Spectrum's products, so I was bummed the mayo didn't work out We use their coconut... -
ARCHIVED Homemade Mayo Recipe
vbecton replied to vbecton's topic in Gluten-Free Recipes & Cooking Tips
OMG, you said RANCH! That is music to my ears after going dairy free. I used to love Ranch, but it's just a memory now. I'll try this mayo and see how it compares. Yummy. And good idea about attaching the jar to the machine. Everyone else, thanks for the ideas. I'm hopeful about mayo afterall -
My symptoms since going gluten-free are mounting. I'll spare you all the details, especially if you've seen my other posts! So... I started on digestive enzymes yesterday. I'm taking Protease, Lipase, Amylase, Cellulase and some others are sprinkled in the pill for good measure. But those are the bulk that will help me break down carbs, fats, &...

Sounds like withdrawals to me. There was nothing on the internet that could have prepared me for the withdrawal symptoms. 2 straight weeks of feeling like a Mack truck ran me over. I felt so exhausted, had bizarre dreams, nauseated, strange BM's, out of control hunger. I only kept reading about withdrawals lasting 3 days. Well, 3 days was just the beginning...

ARCHIVED Homemade Mayo Recipe
vbecton replied to vbecton's topic in Gluten-Free Recipes & Cooking Tips
Thanks for the recipe. I might even try to get that Hellman's in the meantime. I'm not a big mayo person, I'm a mustard person. But my kiddos love sandwiches with egg salad or chicken salad. And, I cannot lie, I also love a helping of chicken salad -
ARCHIVED Another Diagnosis Compliments Of Celiac
vbecton replied to vbecton's topic in Coping with Celiac Disease
Good advice. I'm going to my chiro tomorrow who has a PT in his office. I'll see about squeezing myself right in his eyesight for some help I definitely need some help. I had a massage last week and almost fell in-love with the massage lady. I nearly fell to my knees and begged her to move in with me. I'm glad I composed myself enough to walk out of... -
ARCHIVED Another Diagnosis Compliments Of Celiac
vbecton replied to vbecton's topic in Coping with Celiac Disease
Well, I hope I'm lucky like you with this going into remission. The diet has helped so many of my symptoms, but other symptoms are still hanging around, or some are worse (bone pain). I hope this is all part of healing and that over time things will improve. That would be swell! -
ARCHIVED Another Diagnosis Compliments Of Celiac
vbecton replied to vbecton's topic in Coping with Celiac Disease
I was thinking the nightshades would eventually have to go and now is probably the right time. Since going gluten-free my back pain is much worse, so I want to cut down on anything inflammatory or aggravating. BUT, I love tomatoes and bell peppers!!! I grow 4 different kinds in my garden. Those poor babies. My husband will just have to eat them all. -
ARCHIVED Another Diagnosis Compliments Of Celiac
vbecton replied to vbecton's topic in Coping with Celiac Disease
I wish I sat down more. Even through my exhaustion, I am constantly up doing stuff. But, I'm trying to sit more often. Problem is, I just want to sleep the minute I sit down What is really killing my back are the compression movements in my workout. I am incorporating the eliptical machine (BORING!) instead of my cross training because the jumping... -
I'm in need of a homemade mayo recipe. All the store bought ones contain either diary, gluten, or soy. I cannot eat any of that. I'd rather make my own and know it's safe Anybody know of a good mayo recipe?
-
You must have been reading my mind! I needed a homemade taco seasoning because all the store bought ones either have gluten, soy, dairy, etc... in them! Thanks.

Good tip! I'm going to try this. I'm getting pretty tired of eggs. I need some flava

ARCHIVED I Feel Miserable And Alone
vbecton replied to captaincramp's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
So sorry to hear about your struggles, but it sounds so familiar! I think most of us can relate to your story. My out-of-control hunger is still ongoing and I'm 3 months on gluten-free. I wouldn't worry too much about that because with Celiac, your body needs to heal and that can take lots of time. Like another poster said, your body is asking for...
