    I'd say your problem isn't indulging, it's overindulging. Nuts and seeds are probably fine, as long as you don't eat a BUNCH of them! We do tend to be sensitive to high amounts of fiber early in the diet, try to use nuts and seeds as accessories instead of meals .

  6. Side note- please keep in mind that Arrowhead Mills does NOT have a dedicated facility, their gluten-free stuff is made in the same place as all their gluten stuff. This may not be an issue for you, I know I can't use it. Just wanted to mention!

  10. Sorry it took me so long to respond. Does anyone know of any correlation between certain symptoms and bone density issues? Like are you more prone to fracture? What should someone like me do, who was tested every way there is and came up negative? Is it really that likely I'll have bone density issues? I'll never get my insurance to cover that bone density...

  14. I'm curious what sort of testing other countries offer and what sort of process their medical researchersare required to go through to get their processes verified. Countries like Italy and Ireland where testing and diagnosis seem a much more common thing. How are their doctors trained? Would someone like Dr Fine be allowed to 'practice' in another country...
  15. I say butter or grease the pan, pour some cinnamon sugar in there and swirl it around to coat, just like flouring a pan. Then once the batter's ready, slightly stir in a swirl of cinnamon sugar, then it will mix itself just a bit more as you pour it into the pan. That's what I'd do, anywho. It'll probably take some practice, you'll just have to do this again...
  16. See, I go the other way. I use LOTS of broth and water and boil the noodles in the borth because I like how it tastes that way, the noodles taste different to me. I like my soup rather chunky though....

  18. Ssims, just keep in mind, a lot of us have experienced additional intolerances after going gluten-free, and soemtimes this stems from overloading on one replacement food. I went nuts with peanut butter after I went gluten-free, and now I can't have peanuts. Just try to make sure you get lots of variety. And here's a recipe for baked mac & cheese, it's...

There's a reason it takes an average of seven years to get diagnosed in this country, and that is because our healthcare system is not trained to diagnose Celiac. I would ask you to please keep this in mind when advising people to put their trust in this system...
