I'll add to this thread for now... My DD had Dippin' Dots a few weeks ago at the Pepsi Center in Denver. They had just put the packaging in the trash so my hubby read the label and gave it the go-ahead. She got "plain" ones (i.e. not the cookie or candy types) and did not have a reaction (and any amount of gluten gives her a reaction). -

I was under the understanding that distilled vinegar was safe (unless flavors containing gluten are added in after the distillation process). So it's possible vinegars may not be safe at all? I could totally see how that would have happened. The girl loves pickles (especially bread and butter pickles). Eeeegaaads this is hard sometimes. -
This isn't really much help since it's a different kind, but we eat the stuff in the tube 1-2 times per week. We slice it up and saute it in olive oil with garlic and onions. Then we make pattys from gluten-free italian sausage and serve on top of the polenta rounds. Top with parmesan (if you can) and Classico spag sauce and we usually serve it with fresh...

My DD noticed a change with every single meal. If it was a gluten-free meal--she didn't get a tummy ache or reflux symptoms. If it was gluten-y, she'd get reflux. Every single day. So, pretty much from day 1 of gluten-free she has felt better. I will add, though, that she had pretty mild symptoms compared to some to begin with. -

That experience practically sums up what my daughter (who is also 9) experienced for her endoscopy as well, although my daughter was mildly symptomatic. My main suggestion would be to try and have the procedure earlier in the morning rather than later because there's no food after midnight the night before. That would make for a very cranky 2 year old... -

Wow. Thanks so much! We usually shop at King Soopers (which is a Kroger store) and I'm waiting to hear back where I can see the ingredients for all the Disney Magic Selections products without having to spend hours in the grocery store doing so, because I've heard quite a bit of that stuff is gluten-free. I will definitely have to check out WalMart though... -
I think Dr. Hoffenburg did the endoscopy, but we've been seeing a PA in the GI office named Stephanie Petersburg. I think she was surprised it was Celiacs, but she was certainly diligent and prompt throughout the whole process. DD had so many of the mild symptoms, I could see how it could have gone undiagnosed for years and years.
