Get a couple of regular thermoses for your child. They work GREAT to keep the food hot or cold. We've been using thermoses for my son's meals for YEARS because he only likes to eat pasta. I've never used a cheese sauce with Enchiladas. I've always just baked them with fresh grated cheese on top. Any cheddar or mexican mix from the supermarket works if you want to get the pre-shredded stuff. Bake them covered for the first 20 minutes. I haven't tried the Bob's version, so I can't speak to that. I did buy 3 bags of it on Amazon and it ended up costing $5 per pound. But I combine it with the cheapy flour from the asian market. You need 2 cups of the AF flour for every 3 cups of mix you make. There may be a health food store in your area that can special order it for you. I've called around... -

I usually use a 50 50 mix of corn flour and rice flour. Corn meal is also good with chicken if you're going to fry it, or oven fry it. I usually do a mix of corn and rice flour, salt and pepper and dried oregano. Comes out great. Tastes like I dredged in italian breadcrumbs. -

You don't have to make separate meals per se, you can just use the same ingredients to make 2 versions of the same meal. It's summer, and perhaps the grill could be your friend. These are gooey. The trick is to refrigerate the dough before you cook it. If you have a convection oven, cook them at 350 convection and that will make them even chewier. I don't like them either, but they have kid-sized yogurt drinks that my son actually will drink. The yoplait ones are too big and rather gelatinous in texture and have kind of a chalky taste. I just keep my fingers crossed that he'll be less picky once he feels better. But it hasn't happened yet! -

I'm in the Boston area. We went to Children's Hospital. They have a celiac group there. I wonder if they're so keen on the biopsy because it's the only thing with a celiac patient that they can make $$ on. He was also a younger guy. They tend to be very gung ho about procedures as well. We talked to the nutritionist about the dairy issue. She said that what we were describing did sound like lactose intolerance, as opposed to a real cascien allergy. We are mostly doing lactose-free or low lactose dairy and just switched to lactaid milk. We'll see how that goes... I'll check the toothpaste. That's a good idea. -

It took a week to even get the referral to the GI. From there it was a little over a month to get an appointment. So, we went to go see the GI today. It was a frustrating visit. He said given the blood test results, and the positive response to the diet (we started when we got the blood test results) he was 90% certain that it was celiac, but he would not "treat" him for celiac w/o the biopsy. I don't live out there, but I spend a lot of time in Shelburne Falls. My folks have a place there.
