  1. So, we just had a surprise at our house. My son (4) tested positive for celiac disease via TTG, (full ELISA was abnormal) over the summer. We immediately went gluten free and although it took a few months his tummy troubles have abated. So, with the blessing of our second GI we have decided to postpone the biopsy indefinitely. Based on his lab work and...
  2. Most of the Bette Haggman recipes use a mix of white rice flour, tapico flour and potato starch (all of which you can get cheaply at the Asian market) One of her flour mixes uses potato flour, which is expensive, but you use 1 tsp per 3 cups of flour, so a 1 lb bag will last a long time in the freezer. I buy the brown rice flour in bulk straight from www...
  3. If it's wheat based modified food starch, they have to say wheat by law. So, it's probably corn based MFS unless it says wheat? I'd call on the food coloring if it doesn't specifically say wheat. Or does it?
  4. I can ask parents, but what WE think is helpful, isn't always what is ACTUALLY helpful! There is a fine line between 'helping' and embarrassing your kid. I was hoping some teens on this board could help me know the difference.
  5. If you put a a paper towel in the thermos with the chicken nuggets they may not get so soggy. But in general, some days my super picky kid just doesn't eat his lunch. I don't even think about it because, I know he likes it. So, for whatever reason he just didn't feel like eating much lunch that day. Kids have weird metabolisms that way. Some days they...
  6. I'm curious... Where do you live that you can 'ignore' the school's cut off. We missed ours by about five hours and we have to wait a year to start kindergarten. The school superintendent said that a firm, 'set in stone' cut off is the only way to avoid law suits. In any case, in most states the kindergarten curriculum is what those of us 'old' folks...
  7. I have had fabulous results over the past couple of months since we started and here's what I learned. Annalise Roberts is AWESOME. You do need to use the expensive brown rice flour for the best results, but they're really worth it. I served a cake to a group of non celiacs last night and it was the best cake they'd ever eaten. Plus you only have to have...
  8. If you decide to do the gluten challenge, it could take 3 months or more to see much of a difference. The level of vigilance to do a gluten free diet is really exhausting, but if it is the problem it will probably be worth it. If you're going to do it, I'd strongly suggest getting all the gluten out of your house so you don't have to worry about cross...
  9. Hi Mel's Mom, We were in exactly your shoes in June. My son wasn't nearly as sick as your daughter was, but I knew we had to be really careful about this. My son is 4, so our issues are a little different, but here's what helped us. I think now that you pulled the vitamins, you will see some better results. All Crest and Colgate toothpaste are gluten free...
  10. How old is your daughter? My son is 4 and attends preschool. They had fairly hygienic food policies in place before we found out about his celiac. Perhaps you could discuss this with your church day care. Here's what they do for all the children at my son's school (from babies to preschoolers) Kids wash hands before all meals or snacks Kids...
  11. I saw Calumet Baking Powder listed on a Gluten Free list we got from the nutritionist. It's made by Kraft (I think) or one of the companies that doesn't hide their gluten. It's "double acting" and my stuff has been rising like CRAZY since I started using it. It works GREAT. And it's gluten free.
  12. Hi guys, My son is only 4, but he'll be starting his public school career before I know it. I'm just wondering what your parents did for you that helped you cope with eating different stuff from the rest of the kids, both during school and with your friends, etc. I want him to be safe, but I also don't want him to be sick. And I REALLY don't want him...
  13. My son is the pickiest eater, both pre and post gluten free. He eats Cereal (Health Valley Corn and Rice Crunch 'Ems) Muenster cheese (and no other) Fruit (apples, grapes, strawberries and suddenly PEACHES) Pasta (rice) with butter or plain. Milk Popsicles and tootsie pops (and no other sweets) The nutritionist said it's fine. As long as he...
  14. You can get it on line, and you'll end up paying about $10 for a 3 lb bag. But you can mix it with cheap-o potato starch and tapioca flour from the Asian market. A 3 lb bag will make about six dozen muffins four layer cakes, four dozen chocolate chip cookies, a peach crisp, peach ginger scones and a couple other things that I can't remember. (this is what...
  15. Here's the easiest thing I make. I take a gordita (thick corn tortilla) put on some spaghetti sauce from a jar and a slice of muenster cheese (shredded would work for this too.) I put it in the toaster oven at 400 until the cheese melts, and I have a mini pizza. Easy, fast and very yummy.
  16. I spend a lot of time in Shelburne Falls. Where are these restaurants you're talking about? We spend most of the time out there cooking. But occasionally I'd like a night out! Which ice cream store are you talking about? Best of luck with your business!

    ARCHIVED Childrens Hospital Boston

The first doc we saw didn't want to work with us. So, we're going to another in a couple of weeks. I know he has treated celiac w/o biopsy for another family in my town. I had a long talk with his assistant. I'm willing to biopsy in a couple of years when he's a willing partner in all this. But a 4 year old? I don't think so. not really sure what the GI...
  18. The ingredients in Lactaid are milk, and an enzyme that 'eats' the lactose. We've been using it off and on without problems. However, we usually buy the Land o' Lakes Lactose free milk because it's a little cheaper.
  19. I'm a big fan of Chicago Metallic for cake pans. It's heavy duty aluminum and they hold up really well.
  20. When my son got dx, I got all the gluten out of my house because I wanted it to be a safe environment for him. But he's four years old, so it is a different situation. However, you can make gluten-free cookies and pancakes and everything he's used to with gluten-free flours. It just takes a bit of practice, but gluten-free baking is really no more difficult...
  21. check out the "Oxford Spa" on Oxford Street in Cambridge. They have fabulous sandwiches on gluten-free bread and really good gluten-free brownies and other baked goods. The owner's daughter is celiac and they seem to "get it." It's a very pleasant place to sit with a laptop if you're not there right over the lunch hour. It's about a 10 minute walk from...
  22. Does Rialto have a kids menu? Just in case we need somewhere to go with the kids and the in-laws...
  23. I send my preschooler off with a thermos of hot rice pasta in the morning and it's ALWAYS still hot once he opens it. I don't think there is always a need to re-heat gluten free food if you use a thermos, any more than there is a need to heat up 'regular' food. You can send sandwiches on gluten-free bread, or make your own 'lunchables' with gluten-free...
  24. I've tried a bunch of different baking strategies. But now, I'm an Annalise Roberts convert. All her recipes (except the bread) use the same flour mix. And they are all fabulous. I don't have celiac, or any kind of food allergies, but I keep a gluten free house so I don't contaminate any thing my celiac son eats. So, I can go back and forth if I like...
  25. I was (and still am) horse crazy from three years old on. As far as gluten goes, you can check with the farms you're looking at. Most horse farms in New England use sawdust and shavings for bedding and we feed grass/clover hay. We just dont' grow wheat around Massachusetts! I know it's different in the midwest where you are. Check with the farms and see...
