  1. Get a couple of regular thermoses for your child. They work GREAT to keep the food hot or cold. We've been using thermoses for my son's meals for YEARS because he only likes to eat pasta. Now it's rice pasta, but his teacher says it's always quite warm when he eats it. I spoke to the director at my son's preschool, and they will have gluten free art...
  2. I've never used a cheese sauce with Enchiladas. I've always just baked them with fresh grated cheese on top. Any cheddar or mexican mix from the supermarket works if you want to get the pre-shredded stuff. Bake them covered for the first 20 minutes. Then remove foil and bake for another 10 at around 400 degrees and they're perfect. Trader Joes makes...
  3. My son's preschool is getting ready to buy their art supplies for next year. They have been very accommodating with regards to providing gluten free options for my son. We're looking to make sure we have as many gluten-free art supplies as we can. As far as I can tell, Crayola paints are OK. Elmer's is all fine EXCEPT the finger paints. I found a place...
  4. I haven't tried the Bob's version, so I can't speak to that. I did buy 3 bags of it on Amazon and it ended up costing $5 per pound. But I combine it with the cheapy flour from the asian market. You need 2 cups of the AF flour for every 3 cups of mix you make. There may be a health food store in your area that can special order it for you. I've called around...
  5. I usually use a 50 50 mix of corn flour and rice flour. Corn meal is also good with chicken if you're going to fry it, or oven fry it. I usually do a mix of corn and rice flour, salt and pepper and dried oregano. Comes out great. Tastes like I dredged in italian breadcrumbs.
  6. You don't have to make separate meals per se, you can just use the same ingredients to make 2 versions of the same meal. It's summer, and perhaps the grill could be your friend. You could marinate some chicken for yourself and save off some plain or salt and pepper chicken. You cook his plain chicken first and put it on a separate serving plate and then...
  7. And that can take months of these symptoms? YIKES My son's been so grouchy since we pulled the gluten. He doesn't miss it. His meals are mostly the same. It took a while to find some cereal that he really likes. But MAN he's been impossible. I know some of it is normal 3 1/2 year old stuff. But it's been notably worse since we stopped the gluten mid...

    ARCHIVED Dining In Nh

Thanks! For some reason I had assumed that Storyland was down near Canobie Lake Park. Not sure WHY I thought that, but this will make our trip awesome. Rafferty's sounds great. This will be the first time we'll eat in a restaurant since the life changing phone call back in June.
  9. Thanks so much for all your help. I've done a lot of experimenting and I've found that Annelise Roberts is my gal. I have to special order the brown rice flour, but MAN her recipes work. Her vanilla cupcakes rise perfectly and everybody loves them. I've never had a dud with any of the muffins I've made either. I really like it because I only need ONE...

    ARCHIVED Dining In Nh

Do you guys know of anything near Southern Winnepausaukee? We're going there in August. We'll have a kitchen in our hotel, but it would be really nice to take my son to a restaurant that serves pasta he can eat. Any suggestions for Southern New Hampshire would be really helpful! We're hoping to go to Storyland after we attend a wedding in August. Thanks...
  11. There's a woman in my area that has a home based baking business. I don't know much about her, other than she is totally swamped with orders! Her website is www.celiacakes.com if you want to check it out. It might give you some ideas.
  12. These are gooey. The trick is to refrigerate the dough before you cook it. If you have a convection oven, cook them at 350 convection and that will make them even chewier. Otherwise, do as I directed. I'd recommend using finely ground Asian rice flour in the flour mix. I don't have celiac disease (my son does) so, I can go back and forth and I have no...
  13. Hi there, I am going through the EXACT same thing at the moment, and here's what I did. (My son will be 4 in September.) We had 3 positive blood tests and made an appointment to see the GI. I started the gluten-free diet on my son immediately. He's not 100% better, but I'm satisfied with his response to the diet. His energy levels are higher, his appetite...
  14. I don't like them either, but they have kid-sized yogurt drinks that my son actually will drink. The yoplait ones are too big and rather gelatinous in texture and have kind of a chalky taste. I just keep my fingers crossed that he'll be less picky once he feels better. But it hasn't happened yet!
  15. We went to the nutritionist on Wednesday. She specializes in Celiac and other food allergies and she really knew her stuff. I told her that I had pulled my son off of Danimals because of the statement on their website, and she told me to take it with a grain of salt. Dannon says they can't guarantee their products don't have gluten because they get their...
  16. I'm in the Boston area. We went to Children's Hospital. They have a celiac group there. I wonder if they're so keen on the biopsy because it's the only thing with a celiac patient that they can make $$ on. He was also a younger guy. They tend to be very gung ho about procedures as well. If anybody knows somebody that will work with us on this, I'd be...
  17. We talked to the nutritionist about the dairy issue. She said that what we were describing did sound like lactose intolerance, as opposed to a real cascien allergy. We are mostly doing lactose-free or low lactose dairy and just switched to lactaid milk. We'll see how that goes... I'll check the toothpaste. That's a good idea.
  18. It took a week to even get the referral to the GI. From there it was a little over a month to get an appointment. Mu son has been gluten free for over a month and we've seen the following changes: Huge increase in appetite Less diarrhea More energy Asthma is gone. I haven't needed his inhaler since we pulled the gluten. But what has not changed...
  19. So, we went to go see the GI today. It was a frustrating visit. He said given the blood test results, and the positive response to the diet (we started when we got the blood test results) he was 90% certain that it was celiac, but he would not "treat" him for celiac w/o the biopsy. So, we'd have to put him back on gluten for a month and he'd undergo...
  20. I don't live out there, but I spend a lot of time in Shelburne Falls. My folks have a place there. (Note picture of me and my son at High Ledges in Shelburne ) What Gluten Free restaurants are available out there? I know Green Fields Market was very knowledgeable about gluten-free products, but we hadn't looked much beyond there. Thanks!!
  21. Thanks everybody! This gives me a LOT to work with. I'd better start making some practice cakes ASAP.
  22. I ordered some Authentic Foods Brown Rice flour off of Amazon and made a fee Annalise Roberts recipes with it. They were FABULOUS. however, with shipping this flour costs approximately $5 per pound. There's nowhere in metro Boston that carries it. Does anybody else make a superfine brown rice flour? have any of you used the superfine white rice...
  23. Thanks so much for the replies. I know there are some pretty fabulous vegan cakes out there. I'm wondering if anybody has ever made one of those with gluten-free flour? This is for a 4th birthday party, so the cake really needs to look like a birthday cake. This one that I found on all recipes sounded kind of like what I was after, but I wasn't sure...
  24. A friend is having a birthday party for her son. She wants one cake that everybody can eat, so it needs to have NONE of the following: Gluten Eggs Soy Dairy is OK for these kids. Any recipe ideas? Thanks! Margaret
  25. Hi there, I've seen a lot of requests & questions for and about gluten free skin care products, lotions and shampoos, etc. I read on this website that it is not absorbed through the skin, ie if a child plays with homemade playdough, he should be fine as long as he washes his hands really well before he eats. Are some people having a regular allergy...
