  3. Hi there, I'm going to DC and Philadelphia in April and I needs some ideas for places to take my super picky gluten-free son. He mostly eats gluten free pasta and sandwiches. Are there any hidden gems in either of these cities? We'll likely be bringing his food everywhere with us, but in case there's something out there, I'd love to know about it...

    One thing you can do is get the gene test for them. That would let you know if you could rule it out in the future, or if you have to keep testing. I plan on doing that for my daughter who doesn't seem to have it (no symptoms, negative TTG). That way we'll know if we need to keep testing for it.   9. My son is the only one who has celiac, but my house is gluten free. (except for the beer that my husband drinks) I cook all the time and found that I didn't miss it.   10. My daughter (who has had no signs of celiac, and negative bloodwork) gets no gluten at home. But she eats regular pasta at daycare three times a week and also gets some when we go out to dinner. The house is gluten-free for my 5 year old, so she never gets any at home. Nobody is deprived of great food in my house! I think people that don't underestimate...
  11. I make gluten-free "breadcrumbs" with a mixture half almond flour, and half cornmeal, garlic powder and herbes de provence (but you could easily use Italian Seasoning). Use egg as the glue to hold them on the chicken strips and cook up in olive oil and butter (or one or the other) and they come out really good.

  14. We tend to go to Thai and Japanese restaurants where we can get Mr. Picky-ness a bowl of rice pasta. He likes to squeeze lemon juice on it. At a lot of places, hot dogs and french fries are a pretty safe bet, if you call first and make sure they understand about cross contamination.   21. I don't have a good bread recipe (still looking) but I think psyllium husk is wheat... A celiac friend of mine got violently ill when on metamucil.
  22. If he has celiac with positive serology, it can take a year (it did for my son) for his TTG to go back to normal. So, if he's only been gluten-free for a month, I think it's OK to do the full ELISA panel now. You have a good chance of getting an accurate result if it's positive. If it's negative, you can continue with the diet and let him do a gluten challenge...

  25. for Chicken nuggets try this: Mix almond flour with italian seasonings salt and pepper. (You can make your own by putting almonds in the food processor). Just beat an egg and dip raw chicken tenders into the egg and then coat well with the almond flour mixture.
