  7. I have always used corn starch, even prior to going gluten free. However, I ran out of corn starch one night and used potato starch. Now I am a big potato starch fan. I like it better than corn starch.

  14. I think you need to tell your doctor directly that you would like to be tested for celiac disease. Even if he does an endoscopy for the motility problem, it is unlikely he would do biopsies for celiac disease if you don't ask him to do so. Don't be afraid to discuss your concerns openly. I do miss gluten foods, but I made it my mission to learn to make every single thing that my heart desires in a gluten free form. I keep substitutes for all temptations in my pantry. The only thing I have to add is that I have a thermal lunch box that will either keep things cold with a cold pack so I don't have to use the fridge, or will keep things warm, esp. if I use the thermos.     I eat very little of the gluten free specialty items. We do 99% of our grocery shopping at either walmart or sam's club. I live in the boondocks, population 2500, and have no large gluten-free shops less than 2.5 hours away.
